    Question! Before starting any next pour, are you waiting until water will be just dripping or even dripping will be finished? What I am doing in this recipe - is just giving 45 seconds window for each phase: 15 seconds for pour and 30 for waiting until the next one. Is this right approach or you're doing it differently?
    Asking because when not controlling this part it might be confusing if I'm using really Tetsu's recipe or new James Hoffman's or Matt Winton's v60 🤣 They are really quite the same for me (unfortunatelly)...

      Thank you very much!! I appreciate the feedback. I’m waiting until the water is just dripping - essentially when the whole coffee bed has been saturated with water. Hopefully this helps!

    If your pour overs are taking too long to drain despite the fact that your grounds already seem quite coarse, and you are already careful not to agitate the coffee bed too much, the problem may be the filter you're using. These Hario filters unfortunately no longer have the same quality as in the past (change of production factory) ; personally I obtain better results with Cafec filters (Abaca/T90).

    I've found this to be the best I got from V60. I'm not really a pour over person, and my main method is the Aeropress. But everytime I try any V60 technique (James Hoffman, original Testu Kasuya with 5 pours...), It is always too bitter to my taste, or flat, or too low acidity (I like brilliant aciditity), even grinding coarser. I just increase a little bit the proportion of the first pour, trying to enhance acidity and fruity notes.
