  • Matcha Cookies + Mochi = Matcha Mochi Cookies. These cookies are a perfect combination of two desserts. They are already great as is, but they are even better together. As I searched for a matcha cookie recipe, I realized that there weren’t many. I tried some and they just didn’t come out the way I wanted. Some were too oily, too soft, or crumbled apart, even after cooling. So, I spent several days trying to make the best Matcha Mochi Cookies. The end result was the recipe of my dreams! The matcha flavor wasn’t overpowering and the mochi was perfectly chewy and stretchy. It isn’t time-consuming and anyone can make it. You can use a hand mixer, stand mixer, or without any electric mixers.

    Why do you have to chill the cookie dough?
    In this recipe, you cool the cookie dough so that the dough has a chance to absorb everything (develop flavor). Also, this will ensure that the cookies have a crispy edge and chewy center. I know it is hard to wait, but trust me it will be worth it!
    Why do you use light brown sugar?
    Since light brown sugar contains molasses, it contributes flavor to the cookie and makes sure the cookie doesn’t turn out dry. The brown sugar also makes the cookie a little chewy.
    Can I use dark brown sugar instead of light brown sugar?
    Yes, you can use dark brown sugar. However, it contains more molasses (than light brown sugar) so, it will change the flavor of the cookie. I haven’t tested dark brown sugar, but people have said that it works and is still delicious!
    Can I use all white cane sugar?
    You can , but I do not recommend using all white cane sugar because the cookies will spread too much and they will become a flat crispy cookie. Also, the flavor will not be the same. I haven't tested using all cane sugar, so I can't guarantee anything, but if you do give it a try let me know how it turns out!
    Can I use all brown sugar?
    You can, but I would not recommend it. I chose to do a mix of brown and white sugar for this recipe so that the flavor is just right. My goal was to make the cookie not too soft, not too crispy, and make sure that the flavors are balanced.

    ❗️IMPORTANT NOTE❗️
    *Regular rice flour isn't the same as glutinous rice flour! Glutinous rice flour comes from glutinous rice (aka sticky rice) that gives the mochi its stretch and chew. Rice flour doesn't have the properties/won't come out the same way. Please do not use rice flour! If you are not able to use/find glutinous rice flour, you can still make the cookie recipe (without the mochi) it will still taste delicious! Mochiko sweet rice flour is basically the same as glutinous rice flour, so if you are able to find that, you can use it for the mochi.
    Matcha Mochi Cookie Recipe:
    Author: Michaela Auyeung
    *Makes around 8-10 medium-sized cookies
    Mochi:
    35g Glutinous rice flour or Mochiko
    10g corn starch
    10 - 15g cane/white sugar (amount depends on how sweet you want it)
    70g milk
    1. Mix together the rice flour, cornstarch, sugar
    2. Gradually add in milk while whisking
    3. Steam for 30 min.
    4. Stir halfway through
    5. Once the mochi is done, stir the mochi for 5 min. (This will get it nice and stretchy/chewy)
    6. Cool in the fridge
    Matcha Cookie:
    5 tbsp butter room temperature/softened
    ½ cup packed light brown sugar
    ¼ cup cane sugar/white sugar
    ½ tbsp (1.5 tsp) vanilla extract
    1 egg
    ½ tbsp (1.5 tsp) matcha powder
    ¼ tsp baking soda
    ¼ tsp salt
    1 1/4 cup flour (I found that the dough can come out a bit wet, so I revised the amount of flour to 1 1/4 cup, but try to add it in little by little)
    Instructions:
    1. In a bowl mix together the butter and both sugars. Cream them together until fluffy and light in color (around 5 min). Scrape down the bowl/sides in between.
    2. Add in the egg and vanilla. Mix until they are incorporated.
    3. Sift in the matcha, baking soda, and salt. Add in the flour (NOT sifted). Then fold it in with a spatula until it is combined.
    4. Pop the dough in the fridge for 30 minutes.
    Assembling:

    1. After both the cookie dough and mochi have cooled, preheat your oven to 325 ℉.
    2. Take a scoop of your cookie dough and flatten it out.
    3. Using a wet scoop, take a piece of the mochi and put it in the center of the flattened dough.
    4. Fold the dough in half then pinch to close. Then roll it into a ball.
    5. Place the cookies on a parchment lined baking sheet
    6. Bake the cookies for 12 min.
    7. Enjoy!

    I highly recommend this recipe!!! I've tried another one and it was a complete failure, the mochi and cookie dough were the same amount and there was too much macha that it made it bitter. I'm really glad I found this recipe, I'll definitely use it a lot, thank you so much for sharing it!

    Hi!! I tried making these cookies couple days ago, and I love how easy your recipe was to follow! They turned out so nicely :) Thank you so much for the recipe.
    I just have one question, do you have any suggestions on how to keep the mochi inside chewy and fresh? It got a little hard when we had it on the second and third days and was wondering if you have any suggestions. Thank you so much again!

I'm so glad you gave these cookies a try, thank you so much for your kind words :) For your question, these cookies taste the best when eaten fresh because the mochi does start to get hard. If you would like to eat them in a span of multiple days I would recommend just keeping out the mochi. You could also play around with the sugar amount in the mochi because that may make it last longer. Hope this helps! - Michaela

    I just made your recipe and it tastes absolutely delicious!! However mine came out a lot more raised than yours, whereas yours actually looked flat like a cookie after baking, mine looked like a dome (a puff?) Not sure what went wrong as I used the same measurements, only difference is I used dark brown sugar instead of light brown sugar which I don’t think would’ve caused this. Either way it’s super delicious and I’d definitely make it again!

I checked the recipe again and realized that I said to sift the flour. The flour incorporates more air into the cookie dough, so that's why it came out dome shaped/puffed up.     when you steamed the mochi, did you use a cloth or no cloth at all when steaming? My mochi became hard to mix when I took it out.... I used a cloth that wasn't wet when I did mine.

      Hi! I usually don't use a cloth while steaming, but I sometimes use a towel to wrap around the lid (so that the condensation doesn't drip onto the mochi). The mochi should be sticky, as shown in the video, however, it shouldn't be too hard to mix. The problem may be caused by the glutinous rice flour/mochiko that you used or the measurements may have been wrong. Please provide some more information and I will try to help you figure out what went wrong. 😊

    Hi, I've stumbled across your channel when I was searching for mochi cookie recipe, I can't wait to try it! Though I have a question about sweetness. Looking at the sugar amount to flour ratio, are these cookies on the sweeter side? Would it affect the cookies if the sugar amount is reduced? I love my desserts but not overly sweet.

      Hi there! You could definitely try reducing the sugar. However, these cookies aren't super sweet, to begin with. If you do decide to reduce the sugar, the cookie might come out a bit more crumbly than chewy. Let me know how it goes and I hope you like these cookies!

    Hi I made the Matcha Mochi cookies yesterday it was very nice so when it cool down completely I put it in an air tight container and today when I want to eat it it turn out to stick all together can I know how to handle it?
