I sew since many years the gusset same way. All other tutorial tell us to roll the front part and then sew the gusset and roll back the parts. This/your shown way is easier and better to understand. Thank you so much!
The only problem doing them this way on an overlocker is the tails of the seams which you'd have to sew in. I also found the size of the elastic given for the knickers I made was too small on the legs and had to be stretched too much and made them wrinkle up and not sit flat like they should.
This would have been infinitely easier to understand if there had been clearly differentiated right and wrong sides of the fabric visible in the tutorial.

Does the gusset need to be of a different type of fabric like cotton? If you are using polyester can the gusset be polyester?

Hi Linda, it says on the Pattern Information (included with the pattern) that the seam allowance for all joining seams is 1 cm--so the side seams too!
