I've used up all my canned beef, so I'm needing to get it in bulk as you had. Oh and I love how you used the oven to cook the meat first. That will save me time standing over a pan. I'm totally going to start doing that with my meats!

I love canned meat. I learned how to can last year so I could have shelf stable meat. I usually raw pack unless I am making a recipe like Mississippi Pot Roast. I made some Mississippi Pot Roast a year ago. We just opened it and the dill flavor had infused into the meat. It was so good. I used whole pepperoncini so it wasn’t too spicy. It was perfect for me. I think it was pork roast. I am enjoying your videos. I also saw a loaf of homemade bread and I think I saw your canned applesauce on the counter. You are an inspiration!! Have a blessed day!

Thank you! I actually learned something. I was putting the weight on too soon. I was not waiting for that super fast solid stream the video definitely assisted me with that. And pushing down the meat was extremely helpful. I always thought I had to have space between the meat in order for it to get cooked properly for canning. So far I’ve only ever raw packed ‘ugly chicken’ and while it’s certainly easy enough, I’ve been curious what differences there may be in the end product.
I think both methods are tender. Its been awhile since I have used a jar of raw pack chicken. I love the tenderness of baked chicken before packing into jars.

Even the smallest of cracks have been happening and I hate to throw out quart jars if I can use them for something else, ideas? Thanks for your wonderful variety of videos, such a great inspiration!
I have a jar brush that I use for cleaning that I love. I find that brush at a Mennonite dry good store. I use the cracked jars for storing food in like herbs that I grew myself.
Cold pack (ugly) meat is, admittedly, easier, but I prefer hot pack. I also add the juices from the pan back to whatever liquid I'm using to fill the jars. Adds a lil more flavor and no waste.
I would need to have a major life change to go long enough without canning chicken broth to forget it's 25min for quarts 🤣🤣 that's just me, check your guides!

Meat and poultry do not last in the freezer How long do they last canned or dried?
I can about 40 jars and it will keep for 2 years but I use it up before then
