I really don't understand how he does not see his food burning on the kadai. By the time he puts the tomatoes, everything has burnt and stuck to the bottom and he adds dry spices on top of that. They will instantly burn.. He keeps saying low flame, but the way the pan is smoking, you know it is nowhere near low flame.
Yes i too noted it the garam masala are burned surely it will give bitter taste😑

I feel most of his recipe's, he leaves the tempering for long time with high heat and it seems it burned. Here also the same. It will change the taste. sorry I am not finding fault on professional chef but it's observation.
This is already released with another name " kadalai curry " in 2021
The ingredients differ for both the recipes... It's not same.
