mattbackvass, That video was taken about 3 years ago and I have learned a lot more about mixing dough since then. You can take the seasick crocodile, I sure don't mind.

Was this hot, cold, or ice water in the recipe? The recipe is flour, water, salt, oil and IDY? What is IDY?

It can pass the widowpane test, but that isn't really needed if you cold ferment your dough.

what is the price for this machine
The price I paid for a used, reconditioned Hobart 20 quart mixer was about $1,400 dollars. Some can be purchased at actions for cheaper.
