But as you said, once you do this 3 or 4 times you'll have it mastered, so that's my goal. I'm sure you'll love the dough as much as we do. I do find that the dough sometimes needs a little less or more water depending on the humidity. Also, in cold temps, I warm my oven at the lowest setting for a few mins and put the mixer bowl in the oven covered with a hand towel to help the dough rise faster. Enjoy that pizza!!!!

It comes out heavy, not a light fluffier dough, then I watched this video and made it as you were making it and I can already tell a difference in my dough, I first thought it was from the humidity here in south florida, but following your recipe seems much better... Made your pizza dough after many failed attempts. It was blooming the yeast that helped my recipe. I also didn't know to let it rise 2X. We did Halloween pizzas and everyone got to make their own. Great for a party - only suggestion is to buy individual pizza stones so storage and cooking is easier. THANKS! 🍕

Just made this dough yesterday and I can definitely say it’s delicious. Made a Pesto pizza, a pepperoni cheese one , and a cheese only for my kiddos. All delicious. So good in fact, we made it again today. Thanks For the simple recipe man.

I was struggling with my pizza dough until now. I have been cooking my pizza in oven on a stone, and frying pan. I now am cooking my best pizzas but cooking at 700 degrees on my Big Green Egg. My pizzas were just ok until I found this video. thanks buddy!
Great recipe. Used this as my first ever dough and it turned out great (massive deep pan pizza but flavoursome dough!). Have it rising again and will split it in a few balls later to make some thinner crust. My girlfriend bought some pizza bases in the store yesterday but they'll probably go straight to the bin. It's so little effort since I can make the dough during my lunch break while working from home and pizza becomes an actual dinner this way, instead of a quick meal because "you have to eat". Once I get my own place with a yard I'll try out your other stuff! EDIT: My gf was a little cheeky and put the store bought bases in the freezer. But the dough was great again. Made two thinner ones using this recipe and will reduce it to four bases next time so our housemate can join in as well!

I made pizza from scratch a couple of days ago for the first time and it was such a disappointment -- heavy dough, so-so sauce -- that I just had to try again. I followed your recipe and directions for the dough exactly (except I used 1/2 teaspoon garlic powder and all-purpose flour) and it turned out as good as the first pizza was bad: light, crispy, fluffy, tasty, and looked terrific too. This time I made pizza sauce using a jar of Catteli Tomato and Basil spaghetti sauce and a can of tomato paste and it turned out very well indeed and made easily enough for four 12-inch pizzas (I just made one 12-inch pizza today with half the dough from this recipe). Perfect crust and adding garlic powder is a nice touch; deepens the flavor without being over-powering. The double rise likely improved it as well. Delicious!

I made pizza tonight for the first time EVER! It turned out decent......I Used it ALL for one pizza. Should have heeded your advice that it was enough or two. Crust was very thick. Learned my lesson. Should have made it thinner and made TWO pizzas. Still tasted great though! Thank you!
T-Roy, I recently upgraded my 40+ year old Hobart Kitchenaid and replaced it with a Globe SP8. It is a larger (65 pounds) and far more heavy duty machine than the Kitchenaid but is still at a size that can be used in a home kitchen. The next size up is the SP10 but the weight jumps to 245 pounds and is too large for home use. Globe also makes a mixer (SP5) that is a size down from the SP8 but it is roughly the same capacity as the Kitchenaid. As you seem to cook on a professional skill level it might be well worth your while to take a serious look. david
T Roy I have played around, with some pizza recipes. But I'm intimidated, by making pizza dough. I've thought about it long and hard, and never had the skill sets, to produce my own homemade pizza dough. After watching your video on how to make homemade pizza dough, I am re-inspired to try this. This how to video was very informative, and I think it may give me some inspiration to try it myself. I must admit, I was a little disappointed that I didn't see any highflying pizza dough spinning acts in your recipe, but why would you need to. Great recipe, and I like to see, what you can do with this recipe as far as toppings, and final baking ideas. This would make a fantastic part 2 to this recipe. I've been making pizza for decades. I suggest: Use cold water from the tap and heat it to max 110 degs (don't use hot tap water coming from your water heater, yuck), then add sugar, yeast. Use a ratio of two-thirds "00" Italian flour ("00" is milled extra fine), one-third semolina (pasta) flour. Less on the olive oil. Use a food processor to mix. Lot faster, really good results. Taste and texture are on another level.
I appreciate the fact they you mentioned maturing the dough in the refrigerator over night (and even 48 hours, which is what I do) for developing maximum flavor (and easier digestibility, too!). But as you said, letting it rise for a few hours is good for those who just need a pizza ASAP! :D
neurocosm It's amazing how much better the dough tastes when you let it sit in the fridge to rise overnight. I have not done 48hrs in the fridge, but you can bet I will be trying it out. I'm assuming you have to punch it down after 24hrs and do a 2nd rise in the fridge? Thanks so much!!
T-ROY COOKS I flipped it over, but did not officially punch it down :) It tasted UNREAL. I Started it on a Thursday night, and Saturday night had the best pizza I had made home made EVER. It was quite a hydrated dough, so it was very crispy. It takes a bit of forward thinking to want a pizza, but having to wait 2 days, but if you can afford the time, go for it! :D
If your new to making pizza, Keep going, write down your recipes and take notes , learn from yourself as you go along , do not get discouraged,its a cheap hobby to learn and payes off big time when you get good at it 👍
I like the wooden board at the end. I use the dough after first rise but your right a second time is better. I use thyme and Basil in my dough, i never tried garlic but i will. Good job.

I just got my mixer and made this tonight. Dough was delicious and it rose really nicely thanks to your thorough instructions. You are one of the few who mentioned tips and tricks which answered all of my extra questions. So, I tried baking my pizza and it wasn't really brown or crispy. What temperature should it be baked at and how long? I did mine at 400 for 15 minutes.

I love putting garlic in the dough also and sometimes put melted garlic butter on the crust edge when the pizza is almost done cooking. If you want even more flavor from the dough, let it rise slowly in the fridge overnight. You can also get more flavor by letting it rise twice before using it if you're in a hurry. Hi T-Roy. I made your recipe for my Italian wife and she hated it, complaining that it was just a focaccia with cheese. I did some research and found that the traditional Napolitan pizza uses a baker's percentage of 1.2% olive oil relative to four weight whereas yours is about a perfect 10% (My scale shows 4 cups of flour weighs 550 g and 1/4 cup of olive oil weighs 55 g). I thought my pizza came out ok but a born and raised Eye-tailyun begs to differ. I am going to try your recipe again but with much, much less olive oil and see if it comes out ok.
Mr. T-Roy, I have made this recipe countless times and have loved it...Thank you for sharing it! I'm now trying something new, so my question for you concerns using freshly milled flour. Have you ever used it in this recipe? If so, since yeast is involved I was thinking to stick to hard white and possibly mix with kamut, and maybe a tsp of gluten? I'm very new to milling grain but since you emphasized freshness I thought you could share a tip or two. I plan not to sift out the bran and germ, so the challenge is to get a good texture.

worked out perfectly! managed two pizzas rolled up the leftover into balls squished slightly and covered with pizza toppings and voila pizza buns!

I was struggling with my pizza dough until now. I have been cooking my pizza in oven on a stone, and frying pan. I now am cooking my best pizzas but cooking at 700 degrees on my Big Green Egg. My pizzas were just ok until I found this video. thanks buddy!

Great recipe. Used this as my first ever dough and it turned out great (massive deep pan pizza but flavoursome dough!). Have it rising again and will split it in a few balls later to make some thinner crust. My girlfriend bought some pizza bases in the store yesterday but they'll probably go straight to the bin. It's so little effort since I can make the dough during my lunch break while working from home and pizza becomes an actual dinner this way, instead of a quick meal because "you have to eat". Once I get my own place with a yard I'll try out your other stuff!
EDIT: My gf was a little cheeky and put the store bought bases in the freezer. But the dough was great again. Made two thinner ones using this recipe and will reduce it to four bases next time so our housemate can join in as well!

Great recipe. The dough turned out beautifully
I made pizza from scratch a couple of days ago for the first time and it was such a disappointment -- heavy dough, so-so sauce -- that I just had to try again. I followed your recipe and directions for the dough exactly (except I used 1/2 teaspoon garlic powder and all-purpose flour) and it turned out as good as the first pizza was bad: light, crispy, fluffy, tasty, and looked terrific too.
This time I made pizza sauce using a jar of Catteli Tomato and Basil spaghetti sauce and a can of tomato paste and it turned out very well indeed and made easily enough for four 12-inch pizzas (I just made one 12-inch pizza today with half the dough from this recipe).
Perfect crust and adding garlic powder is a nice touch; deepens the flavor without being over-powering. The double rise likely improved it as well. Delicious!

I recently upgraded my 40+ year old Hobart Kitchenaid and replaced it with a Globe SP8. It is a larger (65 pounds) and far more heavy duty machine than the Kitchenaid but is still at a size that can be used in a home kitchen. The next size up is the SP10 but the weight jumps to 245 pounds and is too large for home use. Globe also makes a mixer (SP5) that is a size down from the SP8 but it is roughly the same capacity as the Kitchenaid. As you seem to cook on a professional skill level it might be well worth your while to take a serious look.

T Roy I have played around, with some pizza recipes. But I'm intimidated, by making pizza dough. I've thought about it long and hard, and never had the skill sets, to produce my own homemade pizza dough. After watching your video on how to make homemade pizza dough, I am re-inspired to try this. This how to video was very informative, and I think it may give me some inspiration to try it myself. I must admit, I was a little disappointed that I didn't see any highflying pizza dough spinning acts in your recipe, but why would you need to. Great recipe, and I like to see, what you can do with this recipe as far as toppings, and final baking ideas. This would make a fantastic part 2 to this recipe. Have a happy 4th and thanks for posting.

I've been making pizza for decades. I suggest: Use cold water from the tap and heat it to max 110 degs (don't use hot tap water coming from your water heater, yuck), then add sugar, yeast. Use a ratio of two-thirds "00" Italian flour ("00" is milled extra fine), one-third semolina (pasta) flour. Less on the olive oil. Use a food processor to mix. Lot faster, really good results. Taste and texture are on another level.

I appreciate the fact they you mentioned maturing the dough in the refrigerator over night (and even 48 hours, which is what I do) for developing maximum flavor (and easier digestibility, too!). But as you said, letting it rise for a few hours is good for those who just need a pizza ASAP! :D

neurocosm It's amazing how much better the dough tastes when you let it sit in the fridge to rise overnight. I have not done 48hrs in the fridge, but you can bet I will be trying it out. I'm assuming you have to punch it down after 24hrs and do a 2nd rise in the fridge? Thanks so much!!
T-ROY COOKS I flipped it over, but did not officially punch it down :) It tasted UNREAL. I Started it on a Thursday night, and Saturday night had the best pizza I had made home made EVER. It was quite a hydrated dough, so it was very crispy. It takes a bit of forward thinking to want a pizza, but having to wait 2 days, but if you can afford the time, go for it! :D

I like the wooden board at the end. I use the dough after first rise but your right a second time is better. I use thyme and Basil in my dough, i never tried garlic but i will. Good job.

I just got my mixer and made this tonight. Dough was delicious and it rose really nicely thanks to your thorough instructions. You are one of the few who mentioned tips and tricks which answered all of my extra questions.
So, I tried baking my pizza and it wasn't really brown or crispy. What temperature should it be baked at and how long? I did mine at 400 for 15 minutes.

I love putting garlic in the dough also and sometimes put melted garlic butter on the crust edge when the pizza is almost done cooking. If you want even more flavor from the dough, let it rise slowly in the fridge overnight. You can also get more flavor by letting it rise twice before using it if you're in a hurry. Hi T-Roy. I made your recipe for my Italian wife and she hated it, complaining that it was just a focaccia with cheese. I did some research and found that the traditional Napolitan pizza uses a baker's percentage of 1.2% olive oil relative to four weight whereas yours is about a perfect 10% (My scale shows 4 cups of flour weighs 550 g and 1/4 cup of olive oil weighs 55 g). I thought my pizza came out ok but a born and raised Eye-tailyun begs to differ. I am going to try your recipe again but with much, much less olive oil and see if it comes out ok.

Mr. T-Roy, I have made this recipe countless times and have loved it...Thank you for sharing it! I'm now trying something new, so my question for you concerns using freshly milled flour. Have you ever used it in this recipe? If so, since yeast is involved I was thinking to stick to hard white and possibly mix with kamut, and maybe a tsp of gluten? I'm very new to milling grain but since you emphasized freshness I thought you could share a tip or two. I plan not to sift out the bran and germ, so the challenge is to get a good texture.
