Man...I just LOVE how the Japanese appreciate and respect EVERY aspect of dining..the history is Fascinating!! ..from the ingredients to the tools and preparation to atmosphere and presentation.. It's REALLY BEAUTIFUL.

I don't know what it is but even though I don't understand the language there is something so nostalgic about ambient conversation and laughter. Hearing all the clanging of the Hibachi also tingles my spine.
Even with very fast movement, the chef was so accurate and light with using those metal spatulas against the metal plancha so there were very low scraping and clanking sounds.
I love what they do to the rice! I imagine each grain must be toasted lightly with a soft center, and if they pay that close attention to cooking the rice, the beef must be Heaven in your mouth!
What a treat to watch! I was in Tokyo in November and ate at a great steak house as well, very similar this. Truly amazing experience. What surprised me is they don't use crazy high heat to grill the steaks. Very memorable meal. This looks insanely great!
This is actually almost a mix of reverse sear AND direct! Really cool. The BIG diff between Guga and the Japanese. Guga ALWAYS does hot and fast with high grade Waygu. The fat never really renders, despite its buttery and low melting point. Mouth full of oil.
I'm way late, but I'm still gonna say it. This video was a spiritual experience. I can't remember if I read it or heard it but Sushi was presented in such a way that just looking at it would satisfy you. This had the opposite effect. Every flip, turn, seasoning, cutting, and cleaning just made my appetite GROW. I won't lie, I needed a smoke after watching this.
I just watched this while eating instant noodles (Jin Ramen). I loved my noodles. But I am jealous; I can only imagine how good that steak tastes. Great video Guga! This one was meditative.

They kept it simple: Just salt and freshly ground black pepper.
