The Rock vs Eddie Guerrero.....man that brings back fond memories. I was there at that Raw arena that night. I remember my Grandpa(RIP) took me there and I got to witness that awesome match. We all knew The Rock was going to win but I still cheered for Eddie.
I remember the Rock vs Eddie Guerrero match at time being really good, with Eddie countering the Rock Bottom into a victory roll-esque pin attempt.

That Rocky Maivia/Bret Hart match was supposed to see Hart go over cleanly, but Hart knew what Rock would become and got the booking team to change the result to a DQ. That was the only way to do that match.

You forgot to mention Eddie Guerrero VS Randy Orton which only happened once on Smackdown couple of weeks before Eddie's passing back in 2005, & it ended in a disqualification and then turned in to a tag team match if I remember correctly.
I think The Rock vs Triple H vs Stone Cold - the Triple Threat that would have headlined Survivor Series '99 if it weren't for that dastardly Rikishi - only ever happened once on a Smackdown or Raw near the end of Austins career. I could be wrong about that (and might even be imagining the match), but certainly it was a big missed moment that we never got that in a PPV.
Jeff Hardy vs The Rock I think only happened once as well.

This taught me about wrestling booking. Disqualifications keep the door open for matches down the line... so simple. Also, who remembers The Rock vs. Ric Flair when Rock was the WHC on Raw? I think that was the only time they wrestled one on one.

Another one, though idk if it only happened once, was Eddie vs. HHH, AFTER Eddie had become a Main Eventer.
It was during a draft episode on RAW where it was (RAW) Heavyweight Champ HHH vs. (SD) Heavyweight Champ Eddie. Unfortunately it was ruined by a RAW vs SD brawl for all; but I always wish they somehow could've had a good feud, or at least an actual match, down the line.

A true match yes, if it is less than 10 minutes it wasn't a match and if they are still amazing wrestlers at the time then it should happen a couple of times with a good story and build up, but unfortunately they wont happen because WWE is terrible at making stories now the last good story being the final Wrestlemania match between HBK and Taker
