You gotta wash the meat before seasoning it with vinegar salt and some lemon juice. The bone holds some hook in it to be cleaned. I didn’t see you wash the meat that’s why I’m saying so. Not criticizing just commenting
Don’t get me wrong I love me some Oxtails. We brown them on the stove and stew them with butter beans carrots and spinners ( small dumplings). That’s the Jamaican way. I think I’ll try your way too tho thanks for sharing! 😀

wow, this is awesome. how much do you pay for oxtail typically ? here in eastern Canada, I remember as a kid them being basically garbage meat sold for less than low end cuts of pork. now prices are typically $25 for 4-5 medium segments.

The great thing about cooking is there is several recipes for Ox tail worldwide and had them several times the Jamaican way. I have no favorites lol.
