Its crazy how folks get so stuck on only having a whole roasted bird. I deboned my families tday turkey a few years ago and am still given side eye about to this day!

Oddly, what had me the most mesmerized were the potatoes lol. You said they are just potatoes and we can handle that. While youre right, I have never seen them presented that way. They resembled a pork roast (except the end pieces gave them away.) Have a great Thanksgiving my friend! I bought a single two pound thigh for myself, and I'm still figuring out how I'm going to cook it. All i know is I want stuffing under it to catch the drippings. 😋

I am not a turkey fan at all. I don't cook it, but yeh I will sit down and pretend I am liking it, It's a Family thing. lol Your take on doing turkey this way sounds like a Game changer. Darn, Now I am going to have to try and work with Turkey done in this manner. Wow Thanks for this heads up. 👍✌
They are nice! I highly recommend charcoal if you are thinking of buying one. Electric or gas ones are difficult to get serious smoke going in them. I have had all three.

The best thing you can do to turkey is too brine it. I use a water snd salt ( i know simple ) brine it gets the job done turkey always eaten with no lettover. I tried fried turkey dame thing no leftovers. I never smoked and fria turkey Thats different.

I would smoke it 1 hour at 280 then into the hot oil.
