Smashing is the only way to do deer burgers. I don't mix any fat with my ground venison anymore. 100% all deer smashed on a hot griddle makes it as juicy as you'd ever ask for. Ofcourse, if you can afford to pay $40 for a chunk of wagyu fat...why not?! lol. They look fantastic guys. Loved the video, as usual.
Wow. that wagyu fat will bring some butteriness to the deer. Yum. I’m sure everyone will add their tricks to smash burgers, so here are mine. Use a hot burger press instead of the paper and spatula. And if you do use paper, use parchment. It won’t stick to the meat like wax paper will. I use a dime and a squirt of water to melt my cheese. Also, prefer sautéed onions for the sweeter taste. I rely on the iceberg lettuce for the crunch factor.

I slice my onions very very thin and lay them on top of the meatball before I smash them then when you flip them they sautee in the juice of the burger!! Great video guys!! 💪
I made these last week, bought the BB Wagyu fat. I did add 1/2 of pork fat so that I could grind up an even 16 lbs. so that I could package 8 x 2 lb. packages because I have 5 hungry boys to feed. Before I cooked, I used a stick of frozen butter and grated it over meat with a cheese grater, smashed them on cast iron skillet, AMAZING!!! My entire family loved them. They did not taste like venison, they were really good!!! I will be doing this again. I may try making regular burger instead of smashing next time.
Another great video! I think ill be making these in the near future… have you ever mixed lamb trimmings in with venison for a burger? Curious how the lamb fat would come through… Keep up the great videos!

Your family is just like mine. I raise Bison here in Michigan and also hunt Deer. My Brothers and I cut up all we hunt and kill. We process it all at my farm, on my Hobart! Keep the great Videos coming!
You guys are all a lot of fun watch. I'd go with a slice of raw onion though, and a sesame seed bun, and lets not forget a splash of mustard (but NO ketchup!!!).

I shot a doe first week of the season here in Michigan. I bought some waygu tallow that I ground into all my burger. I did a 10:1 ratio and it was still juicy. It’ll be the only thing I’ll mix in with my venison burger now.
