5:42 A more intuitive way of solving this problem is the 2 tangent lines and the line inside the circle form a triangle and if you split the triangle into 2 congruent right triangles. (Angle B)/2 = 15 and the right angle = 90 and the 3 angles add up to 180. 180-(90+15)=180-105=75. So you get the same answer in the video 75 degrees.

for the tangents' angle and the minor arc, how do you know that that equals 180? does it always equal 180? is there a theorem name for that?

No, just remember that all squares are 180degree

Because when you draw radius on the point of tangency it will be 90°and its form quadratic shap =360°
So 90+90=180
It remaind 180 for two angles
