Your ribs looked great. Did you do the biscuit test to find the hot spots on that grill? My go to rib recipe on a pellet grill is 275 for 2 hours smoke, then wrap with brown sugar and butter ( apple or pineapple juice can be added here) and then another 1 hour 45 to finish. works great for me. Oh and I always use a smoke tube because I love alot of smoke on my meat. Happy barbequing !
Get you some cotton liner gloves then put the black latex gloves over them. You will find that will work better. Get ya a wireless probe stop around 203 degrees.
