Lentil Kofta (Vospov Kufta) and Cabbage Salad

- Before we begin this week’s segment of “Cook with Esso”, I would like to thank you all for the endless amount of support we received! 🫶🏼☺️This week we are making Vospov (Lentil) Kufta! Vospov Kufta is a traditional vegan Armenian dish that is made with red lentils and bulgar (cracked wheat).
Ingredients:
Vospov (Lentil) Kufta:
2 cups red lentil
1 1/2 cups bulgar #1
4 1/2 cups water
1 tsp. cumin
2 tsp. red pepper
1 1/2 tsp. salt
1 tbsp. red pepper paste
1 cup extra virgin olive oil
1 white onion
3 scallions
1 bunch parsley
Cabbage Salad:
half of a large cabbage
the juice of 1 lemon
3 cloves minced garlic
1 tsp. salt
1 tsp. dried mint
1/2 tsp. red pepper
1/4 cup olive oil
Instructions:
Vospov (Lentil) Kufta
1. Thoroughly wash lentils under lukewarm water.
2. In a pot under medium heat, bring water to a light boil and add the washed lentils to the water. Add salt and stir. Cover pot with lid.
3. While the lentils are boiling, be sure to collect white foam that forms on the surface of the water. Let lentils boil for 25 minutes are until they have cooked thoroughly. Meanwhile, finely chop the white onion.
4. Once the lentils are cooked, add the bulgar and turn off heat. Stir to combine the lentils and bulgar.
5. Add in red pepper and cumin. Stir to combine.
6. Pour the olive oil in a saucepan and add in chopped onions. Cook for 10-15 minutes or until onions are translucent.
7. While the onions are cooking, finely chop scallions and parsley.
8. Once the onions become translucent, pour the olive oil and onion mixture on top of the lentils & bulgar. Stir thoroughly to combine altogether. Transfer the mixture to an open pan.
9. Add the pepper paste, chopped scallions, and chopped parsley.
10. Stir to combine. Use hands to combine all ingredients. Dip hands in water to make it easier.
11. Make little individual pieces and plate in platter.
12. Serve and enjoy with pickles and cabbage salad!
Cabbage Salad:
1. Finely chop cabbage into length wide pieces.
2. Add lemon juice, garlic, salt, red pepper, dried mint, and olive oil.
3. Stir to combine and enjoy!
