Where can you turn that one its just a cutscene in my races?
Go to settings -> rules and flags -> pit stop experience and change that to immersive, you probably have that setting on broadcast

What button is for pit stop on PS5 pad ?
usually X but you can change it and this guy didn't even have Immersive pit stops enabled so there was no button to press
