Banana IceCream

  • When you have too much bananas laying around and tired of eating banana bread, here's another treat for you!
    Banana Ice Cream
    In a sauce pan combine-
    1 can evaporated cream
    1 1/2 cups whole milk
    1/2 cup sugar
    Turn heat to medium and scald milk, make sure to not burn the milk.
    In a bowl combine and mix-
    6 egg yolks
    1/2 cup sugar
    2 Tbsp Cornstarch
    Mash 6-7 ripened bananas (remove skins & strings)
    When milk is hot, not a boiling stage. Add a cup at a time to temper the eggs. Pour back into milk and return to heat and cook until thickens.
    Remove from heat and add in-
    2 Tbsp butter
    2 tsp Vanilla extract
    Slightly cool before adding in bananas and nuts. (optional)
    When mixture is cooled completely, add in a 32 oz cool whip. Pour into containers and freeze overnight.
    Enjoy the next day!
    *You can also use other fruits to this vanilla custard like fresh strawberries and my favorite, frozen blueberries.
