    1) There are 2 style of Thai green curry depends on the family preferences.
    First is oily style, you put the coconut cream first and stir-fry the curry paste ultil the coconut oil comes out.
    Second is milky style, you put the coconut later just like Mark's mother-in-law did in the video, and don't let the coconut oil separate off.
    2) Using salt in curry soup is very Thai old school of cooking soup. My Thai mom prefers salt too when she cooking curry. Traditional Thais tend to make soup or curry in a big pot at once for whole family, even for several meals. Thus using fish sauce is the such a waste of ingredients because shrimp paste smell is much stronger than fish sauce and salt are much cheaper. It's more proper to use fish sauce as table season that put a lot amount in to the pot.
    3) Some Thais, also my Thai mom, add some chilli leaves in the paste, too. To give more greenish colour and to decrease amout of chillis in case she's cooking for young children who cannot handle strong hot spicy food.

    A *FUIYOH* from a Thai bloke here. And yes, we eat almost every kind of rice here; brown rice; red rice; riceberry; basmati rice. Basically any rice without olive oil, chili jam, colander, or Jamie Oliver's cooking.

      @@cydzerlight1383 no riceberry is dark purple and it is a combination of black sticky rice (idk how to properly call it in English) and jasmine rice. IMO brown rice tastes better if you wanna go healthy.

    She use salt instead of fish sauce because fish sauce has strong smell that make the curry fragrances go weaker. Some Thai chefs, even some royal recipe, avoid to used fish sauce if they want a fragrance of the ingredients.
    The only ingredient that can be changed to make dish better (for some people) is use coconut sugar or palm sugar instaed of white sugar.
    In addition, brown rice in Thailand is common. Many people like it.

      Totally agree, I lives in Paris but I'm still eating riceberry. In the other hand, I understands Uncle Roger as well. Many oversea Chinese, including my dad and my paternal side relatives dislike unpolished rice. It has a strong aroma which my dad said once like reed mat.

      ​@@M_Jono Well, I prefers its aroma and crunchy texture more than soft and fluffy polished rice. The only problem for it's more difficult to cook. Brown rice has to be soaked before cooked at least 15 min and half of hour for riceberry. I also likes black unpolished sticky rice even it has to be soaked overnight before cooked.
      There is a special mountainous unpolished sticky rice which name is Khao Luem Phua, translated as rice that makes forget husband. It was called like this because of its authentic savory taste.

      The thing about brown rice vs white rice stemmed from the myth that white rice is more supreme and brown rice was for the poor people, due to the upper class about 50 years ago favoring white rice in emulation of foreign diplomats (who dislike brown rice for its harder texture). The myth persisted for quite a long time and has only recently been overturned with the new wave of health-conscious rich folks and the so-called health foods. Somewhere around 10 years ago.
      Nowadays, brown rice is actually more expensive compared to white rice. Unless you've got your own rice paddy, you're more likely to buy white rice due to its cheaper price per kg since you'll get more for the same price you'd buy brown rice.

    Brown rice (ข้าวกล้อง) is typically in Thai as well as sticky rice (ข้าวเหนียว) or Sao Hai rice (ข้าวเสาไห้). Brown rice have more fiber and vitamin compare to the fully process rice (white rice or Jasmin rice).
    People around the world may remember Thai's rice as white Jasmin rice because we exporting it. But we actually have many kind of rice.

    I was born in Thailand and I can confirm that we do eat brown rice. It’s not as common because it’s used to be considered prison food in past but due to health benefits now it’s more of a luxury rice (according to my mom)

      Idk if it's a conspiracy or something but shallots are way more expensive than onions where I live. You can get 3 lbs for $1, whereas a small bag of shallots for $3-5.

      I think he meant that onions are for poor people. Anyways i disagree, i lived 20 years in a region in northern Germany were onions were cultured and harvested and well you have different onions for different purposes. And let me tell you, silver onions definitely are not cheap.

    We cook adobo with a little bit of water with ample amount of vinegar simmer it until tender
    Ingredients are:
    Pork meat or chicken
    Garlic
    Onion
    Vinegar
    Soy sauce
    Salt and corn pepper to taste
    Simmer until it's tender.
    Option additives
    Potato or pineapple to taste different.

    They are from the south of Thailand. Thai people cooking different it depends where they are from...Central Thailand we fry the curry paste with coconut cream first. The other part of Thailand they not usually use coconut melk in their food.

      I think the main reason she dissolved the curry paste and chicken in water first vs. stir-frying the coconut cream with curry paste was because free-range chicken (ไก่บ้าน) is very tough and needs to be stewing for a bit so it's more tender. She is also using bone-in chicken. Very different cooking process than using just the meat.

    I'm 56yr old Thai was taught to saute paste in hot oil few mins then add coconut cream saute until fragrance add your meat choice/s, add coconut milk, vegs and season with fishsauce and sugar. Yummy

    In Thailand the households which eat Brown Rice are usually houses like Mark's which has elders in because of the health benefits. But when there's younger people in the house too they usually, when cooking rice, add equal part normal White Jasmine Rice in also so it's easier to eat.

    Hello Uncle Rogerm, I am Thai and love Thai Green curry a lot especially with a particular noodle named "Khanomjin". Another thing I would like to share is it is so true that many cooks don't put fish sauce when they make food. Fish sauce makes the taste of the food drop. We will put fish sauce when we are ready to eat food. That why we have a small bowl of chopped Thai chilli pepper with fish suace ready on the dining table.

Bald would just genuinely tell you if the food isnt t h a t impressive. Mark would just drool and smile like a zombie in your face. I dont care wherever he is, i just have an allergy for people overreacting/exaggerating and you guys clearly enjoy that. Fine by me but saying hes so wholesome just doesnt rock my boat

    Hi uncle Roger,
    In Thailand, the people separates in to 2 groups : with MSG & None MSG at all. The supporters of each group are almost equal at 50-50 however, almost every restaurants and food shops use MSG for cooking.
    About fish sauce, we will use fish sauce for stir fried dishes and soups but for curry, we are using salt i/o fish sauce in order to bring out the real taste of the curry. (Fish sauce normally are using for making dipping sauce).
    In Thailand, we have 2 different kind of soups so call "KAENG" in our language like "Kaeng Khiew wan" (green curry) etc. Kaeng without coconut milk will use fish sauce for salty taste whereas Kaeng with coconut milk will use salt.
    Mortar & pestle: the one that use for pounding the ingredients made from stone and the one to use for making "SOMTUM" or papaya salad is made of wood. (nowadays there also mortar and pestle made out of iron, brass Aluminum etc.
