Really like Riga. It is one of the most powerfull OPM at the start both economically and militarily, their ideas are not that great but they have their own unique mechanics and great evolution opportunities (either going west forming prussia then germany / Roman Empire or east and form Russia) Ryukyu is also very fun. I've had great times trying to infiltrate japan through the impose peace mechanic and then going to war against all of japan to become the shogun (one of the very few wars I've done where naval dominance greatly outshine land army and enables you to defeat a military 10 times as strong as yours with barely any land battle).
Lot of show strenghts first few years, little expansion towards the south, became monarchy, dismantled the HRE and Austria, inherited burgundy, formed Swabia, reached venice. From there it was just getting 3 provinces from Mamluks to form Jerusalem, getting Maiorca from a big (S)pain and a couple of provinces in the new world. Then you need to move your capital to the new world (I did it by moving it first to a province in Morocco I took from Spain) and conquer/colonize a lot of provinces in south america. Once there, you can spawn Animist zealots from a south american native province, so they can convert enough development that animist is majority dev. I ended up embracing protestantism to convert part of my catholic provinces in Europe so that Animism was majority (like 35% vs 30ish of the other 2 religions). Then you need to switch culture and this can be done through destating/re stating in a day or so and you can become Inca, which converts you to Inti religion. Ideas were espionage (for less AE), infrastructure (for better economics and to develop south america a little bit to push religion majority), and then exploration and expansion. I followed mostly Zlewikk's guide but did more conquering in Europe so I needed to juggle religions a little bit more. I Managed by 1600.

You pretty much describe exactly what i did except i thought it'd be funny to first unify germany (Didnt form just had all of it) as Jerusalem and then followed your converting to Animism thing. Took quite a bit longer due to my dev but after forming Jerusalem and securing at least one animist province you arent in a rush.
I'll be getting to them somewhat soon. When I get to nations like Teutons, Poland, and Livonian Order where they have different paths I'm going to make individual videos for each path.

I just yesterday completed "from frankfurt to the andes" forming swabia with the title nation. Very good experience!
