      So, most Japanese knives are at 10 degrees or so. German knives are at about 14 degrees or so. Wasabi's are at 20 I guess. I work on a bandsaw and scroll saw so I have a digital angle finder. Set it on the blade - zero it. Then set it on the cross bar that holds the wet stone and set that at your 10, 14 or 20 degrees. Simple this way. You can set the angle any where you want it.

      Frustrating no app that isn’t paid to just get the angle

  • @lindaitken3321
    @lindaitken3321 3 ปีที่แล้ว +8

    It seems that unless the cross section angle of the blade (the body of the blade, not the edge) matches the angle of the two sides of the clamp, such that the entire side of each side of the clamp is flat against the side of the blade, there is a very good chance that the edge angle set on one side of the blade not be the same as the edge angle on the other side of the blade. The weak part of this system is the knife clamp.

      @@christopherohl1509 All you have to do is bend the side of the clamp that doesn't have the 3 screws to loosen across the middle of it. That one is slightly off from the other by about 2 degrees. Some guys have shimmed where the screws are with washers or whatever, but I found I could just bend the metal enough to make it match up on both sides. Just keep going back and forth with an angle finder, it's a pain in the ass because you'll have to keep tightening things down to check it, then check it again with a knife clamped in and see which way it needs to be bent, but eventually if your patient and make small adjustments, then take the time to properly clamp it down and check the angle with a good angle finder app, you'll get it so it reads within a 10th of a degree on both sides. Not the best set up straight out of the box, I had to fix the clamp between the stone holder handle and the steel guide rod too, but with a little preventative tweaking it can be made to work very well and be pretty damn accurate.

      Use a black magic marker across the knife edge. Then run your stone over the edge once or twice just to check if the angle of the stone matches the knife edge angle by looking at what of the marker was removed. I go one step farther by using a 10x magnifier or (photographers loupe) to examine the knife edge angle relationship to the sharpening stone angle.

      Bend it a little and keep retightening and checking until both sides are the same, and also check both sides with a knife clamped into it. Some guys have added small shims where it screws on but I found that a slight bend in the right direction trued things up to within a 10th of a degree difference from one side to the other.

      A guess at doing it without measuring it would be that if you are depending on the 15 degree angle of the frame, you would set the arm horizontal, ie, parallel to the table, since the two angles between parallel lines bisected by a diagonal line are the same. But that's just the way it seems to me.

  • @briowulf

    Is the initial sharpening angle the same for all knives, or is it "knife specific"?

    • @ImOnyxRS
      @ImOnyxRS 3 ปีที่แล้ว +2

      Depends on what the knife is for. If it's something that you would be using like a woodsman's knife you want a large angle so that the edge is stronger but less sharp. If you want something like a razor you want a smaller angle so it's as sharp as possible (But the edge will be weak)

    • @jamc666
      @jamc666 2 ปีที่แล้ว +2

      Any app that shows the tilt of your phone will do. The point about the 15° angle is that the knife is already tilted at a +15° angle. Therefore you need to take that into consideration to achieve the desired sharpening angle.
      Example : target 20° sharpening. then the whetstone needs to be tilted an additional +5° to get to 20° (15+5 = 20).
      If the target is 12°, then the whetstone should be tilted -3° (15-3=12)... etc... etc...
      its pretty simple maths actually ...
