Yeah, I'll be honest, I was kinda "ehh" about it at first cuz yeah, I thought Mat was just adding in extra dialogue from some anonymous character for entertainment (though I was not entertained). But after the first 5 or 6 minutes it stopped bothering me. It didn't distract me too much from the video as a whole, and it ended up kinda growing on me towards the end. Finding out the reason behind it made me almost completely forget about the initial annoyance anyway 👌

Something to consider is that these are not the same as the mortar shells on the inside, so they're not going to have the same ratio.
Bob-ombs are either alive or mechanical, but regardless they have other internals...
Going the mechanical route, they are going to need not only the mechanics to move themselves forward, but also whatever homing system is required for them to chase after Mario.
But, if they're alive then they have organs, which should take a large percentage of the internal space.
Scaling up means larger mechanics or larger organs.
This all means the blast range on them would be significantly less than mentioned given the much lower amount of space for gunpowder.

You forgot about the clockwork required to move those really heavy bob-ombs. That would take up a lot of the area dedicated to gunpowder, making them significantly less deadly than you are making them out to be. Compare that to the bullet bill episode, where I believe it is likely the bullet bills could have an explosive payload, and I think they're both at a similar power level relative to each other

I mean, this all assumes it's definitely gunpowder in there. Which is a safe assumption, Bob-ombs being modeled after medieval mortars and all, but this is Game Theory, you can never assume. From the size of the explosions, they're definitely filled with a much lesser explosive.

Crazy how the Mario movie did the opposite with the bullet\banzai bills and the bob-ombs by making king bob-omb fodder but the bullet bills actually useful along with the banzai being the most powerful thing in the movie aside from the power star.
