It is not available as an App on Windows Pro. 23H2 Build 22631.3737 There is that think they slid into an Edge upgrade: Windows CoPilot MSIX Pack. It is supposed to removed soon, not holding my breath.
I can no longer find copilot in the apps list or the control panel programs & features or the start menu. Weird! I have release preview on my old Dell 8930 (24H2) and Copilot is in the list of apps and can be uninstalled.
Load of Bulltosh. Had it on my main PC a few months back. clicked uninstall. It still says it's uninstalled. But all Copilot functions are still there and working. Microsoft are once again giving false hope. They keep doing bulltosh stunts like this. Why can't they understand. If we don't want? When we uninstall it. WE want it to stay that way.
Unfortunately, I'm seeing "This app is part of Windows and can't be uninstalled."

It's grayed out on my machine.
You may have to get into Registry and nip it in the bud there.
I haven’t got the button, mainly because I have uninstalled Copilot a time ago. I’m on a regular W11 (build 22631.3737)
Microsoft website is down for Windows. Download for Windows 11
