Nobody but Americans understand what REAL BBQ is. It was created here by African slaves and has been passed down and perfected by millions of passionate cooks. Real BBQ is smoked meat on low temp for a long, long time. Usually 12-14 hours for pork shoulder and beef brisket.
Logic is Irrelevant What BBQ flavor though? That' rub could be used on any cut of beef or even pork, cooked in any manner and it would still "just" be cooked food. He's braising dat bitch. I like GR quite a bit but it's like since it doesn't have rosemary then suddenly it's BBQ. BBQ MUST involve smoke. Traditionally it's also done at a low temp but some have started to change that way of thinking with great results. Lastly it needs a bark. Not just caramelization, or Maillard reaction but a moa fuggin bark.
Still I'm sure what Mr Ramsey made is bomb, but it's no more BBQ and any other oven roasted brisket.
Also they know how to BBQ all over Latin America. Anyone who skewers a brisket and stabs it in the ground next to a fire to let the brisket infuse with the smoke until you could slice it with a spoon knows how to BBQ.
