Looked at a dozen videos for Tri-Tip, which i have never tried until today. Your video seemed to be what I was looking for. Followed your instruction verbatim. I am now amazed that I have not done this after being on Carnivore for three years. Also surprised at the ease of the experience, and most amazed at the reward. WOW!! Thank you!!
In what universe is Medium Rare 145 degrees? Its better to have the whole tri tip, cooked after sear in 270 degree oven for even cook, set temp probe to 128-130 internal and let it rest for 15min. You cant mess it up.
My local stores have tri tip roasts on sale all the time so we eat these often, but they are roasts untrimmed so there is a fat cap which I like. I just need to learn how to cut the roast into the pieces like you have. I don't understand which way to cut and not have a little triangle piece left over.

You can go to your local rancher and buy tallow and suet, it’s a lot cheaper
