    Tip from a girl with a southern soul and a city mind set add just a teaspoon of that chicken broth into the dough mix and add a touch of pepper! Put your dough mixture into the fridge for a 15 minutes so it can get more firm and the dumpling will keep form when you pick them up to drop them into the broth! Loved the video! Thanks for the refresher!

    I dont think it's a right or wrong way to make dumplings it's what everyone likes. .my grandmother who was one of the best cooks I've ever met used ap flour ice cold water and a bit small bit of vegatables oil ...made a dough rolled it out paper thin cut into squares and froze them . The next day she got her broth up to a rolling boil and dropped them in the hot liquid. The last 10 minutes she added her cooked chicken back in to warm it up.....god this was so good on a cold day

    Jason King, my grandmother was similar; 1 & 1/2 cup of flour mixed with teaspoon of salt, add 1/2 cup of cold water and 1/4 oil, mix, roll, cut into strips and put in broth and de-boned chicken cooked with seasoning you prefer. Done!

    This is the first time I ever heard of anyone adding milk. You can make your own broth with seasoning and later the dumplings already have flour it would have thickened your soup.

  • @patrickdavies5185
    @patrickdavies5185 3 ปีที่แล้ว +9

    Add butter and chicken bullion to create a “broth” and omit the milk. When you add the dumplings, they will thicken your “broth”.
    Roll out to about 1/8” thick and cut with bench scraper. Drop into boiling liquid and carefully separate as they cook.

    This is the BEST way to make dumplings! Thank you!
    I was craving Cracker Barrel dumplings when my husband and I first got married. I found the canned biscuit dough recipe in a cookbook I had (no picture of what the dumplings looked like) not realizing they weren’t the delicious flat dumplings like from Cracker Barrel! I was still learning how to cook so I didn’t realize there was this method. I was so disappointed! Haha but then my mom came for a visit and she taught me how to make the flat ones. Yum yum!!!

  • @rorounique1
    @rorounique1 ปีที่แล้ว +1

    I'm from NC also. We always called it chicken pastry in eastern NC. As I moved around in NC, I found that people called it chicken and dumplings, which I had heard it called that before, but I thought it was from up north. I recently found out the difference. Dumplings are thicker. Sometimes, they're even formed into balls. I've heard some people say they use the canned layered biscuits and just separate the layers and drop them into the pot. Now, pastry is rolled out very thin. And that's how they make them where I grew up. You can also buy the frozen ones. That's how I found out the difference because it's right on the package. There's a brand that makes both think and thin ones, and it's on the package what they're called

We used to leave a big bowl of dumplings out for Santa every year instead of cookies and milk. My mother's taste... Interesting, as a kid. They're just as good as grandma's now that I'm 37. I thought my wife proved that stereotype wrong until my son snitched on her one Christmas morning when he was 5. Lmao. She buttered up my grandma to make them for her. The whole night wrapping presents I was praising how AWESOME they were. Haha. Til this very day almost 10 years later gma still won't admit she was a co-conspirator to that little lie.

    Your dumplings are beautiful. I make mine similar but I do use a couple of chicken breasts with the skin on them so they will make a delicious broth. I remove the chicken and let it cool while I make the dumplings. I think that chicken breasts are easier to work with and everyone loves the white meat. I like to add some chopped onion, celery and a little carrot for flavor and color. They are great on a cold day. You have a beautiful family.

      My grandmother boiled the chicken in the pot to make the broth, and added the dumplings later on. She seasoned it with perhaps too much black pepper and rubbed sage, but that's how I grew up eating it. I've learned to make this dish several different ways over the years. It seems that this is a favorite everywhere, but every family has their own unique version.

    My husband’s family makes this and they call it “pot pie”. Many people make this and call it by different names. Ham or beef are also used. Many central Pennsylvania restaurants sell ham pot pie. My mother in-law used chunks of potatoes
    cooked in the meat stock then add the noodles and served with diced onions on top. I add carrots for a little more vegetable. For my grandmother and many families it was a way to put an inexpensive meal on the table. There is a European name for this but I’m unsure of the spelling “bot poi”?

      I make pot pie in a savory crust. The resulting taste is similar to chicken n dumplings but has more veggies in it and is thicker. I also make Chicken n dumplings, but in a large pot. I boil or bake my chicken with onions and celery and a little shredded carrot for color. This makes a rich broth. If you ever have trouble with your flour lumping when you add it straight into the liquid, try blending it with a cup of warm water or broth before adding to the pot. We all were brought up eating differently, but I am always open to new ideas. Thank you for your video!!

    No vegetables? Especially for the kids. It looks good but it’s more like chicken and flour soup? Thank you for the dumplings recipe.. that’s what I was watching your video for. Beautiful family🥰

      @ShelterMountainFarm  4 ปีที่แล้ว

      Yes, that's essentially what chicken and dumplings is, chicken and flour soup. If you make it with broth especially it is very good for the kids.

      I always found this a good way to sneak vegetables into my kids diets. And maybe grate the onion, because one piece would turn them off before even tasting, lol.

    Uh-oh. Looks like the kids didn’t like it much.. But that ok. Kids don’t like every thing we like and kids are very honest. When I create new food, I let my children taste and give their honest opinions. My middle son is very blunt and will not sugarcoat the truth lol.. I’m a really great cook. I have about 100 recipes on my Instagram: officialmariajade_ .. I haven’t done a youtube because I don’t measure either. It’s a gift to be able to eyeball measurements.

      Sorry there was a part omitted by accident. Add milk or buttermilk until you get a good doughy consistency.

      I’m sorry I left that out! I added enough milk or buttermilk to make a nice soft that can be rolled out easily.

    I wouldn't have made this recipe without all the ingredients! It seems very blah with no chicken broth! I would have boiled the chicken first.
    Also where are the onions, garlic, celery and carrots??? Sorry for the criticism, maybe remake the video when you have all the ingredients ! Also, the music is too loud and distracting! Thanks for the effort!😮😮😮

    Would be awesome if you mentioned what you used to mix up the dumpling dough. Completely skipped over it like we should just know. If I knew, I would not be looking for a youtube video for recipe.

    You could have made your own broth with the chicken you're putting in your recipe. Other than that, your dumplings look good!

    How much milk do I add? Is it 1 cup?

    • @ShelterMountainFarm
      @ShelterMountainFarm  4 ปีที่แล้ว

      I'm so sorry that I mistakingly omitted this. I would say start with a cup and see how the dough comes together. Like I said, I never measure anything out precisely but just add the liquid (buttermilk or milk) until I come up with a good dough consistency. Thanks for watching!

    I'm wondering why you didn't use the chicken stock to do your dumplings in, rather than water and milk. I'm no expert but would make sense to me to boil you chicken, then use the stock water for the dumplings :) I'm going to try these as I live in the North and no one really bothers to make dumplings up here. I just know they're delicious :) Thank you for sharing your recipe.
