My Southern grandmother always had some boiled potato chunks ready to add to Chicken and Dumplings... that way, if somehow there ended up being not enough dumplings, there was an extra starch to throw in and soak up the delicious broth. She also added a little bit of shredded carrot (but I like it better without the carrot). And yes, after age 65 she too used canned biscuits to make the dumplings!

I like your biscuits idea. When I was first married 50 years ago, my landlady told me to use Jiffy Mix rolled biscuit recipe. So after the long process of cooking the chicken, I'd roll out the dough really thin. And drop in the dumplings. Your biscuits in the can are a LOT easier.

I made this tonight. I followed your instructions except for the corn starch and milk. They were good, but I had forgotten about what you had said about salt and maybe should have added less. They were not too salty to enjoy but more salty than I am used to. Thanks for the recipe it was my first time trying to make this. I also have completely changed the way I make Mac and cheese. I now use your recipe with the cheese gravy.

Another shortcut for the dumplin's. I learned this from the guys going deer hunting.
Flour tortillas! If they happen to bag a squirrel or 2, they boil em up with some seasonings and tear up some flour tortillas in there.
I've tried it with some leftover homemade chicken and broth and they weren't too bad. They didn't even know till I told them they were "wannabe" dumplin's.
There is a learning curve here. Boil them too long and they fall apart, not long enough... Well they're tough, chewy.
Thanks for the canned biscuits idea, that looks great!
Thanks for taking the time to share this with us.

Hello, I'm new to your channel and love the cooking. Personally, I make the dumplings myself (homemade) and I scoop a round tablespoon full of dough into the pot and let them cook open air for about 10 minutes or so, then add the lid. I do boil my own chicken and add salt and pepper and chicken broth. At times I'll add vegetables and at times not. Anyway, I love the big round dumplings- chewy and hearty... thanks Chris for the camera work and thanks both for the show.

I'm sure you're a wonderful cook, and you make some delicious dishes, but no matter how you slice it, canned biscuits taste like canned biscuits. I get the idea of using shortcuts. Sometimes you're in a hurry and you don't have time to make homemade dumplings. So, rather than using those canned things, try using frozen biscuits. They're real biscuits, just like grandma used to make. You still get the advantage of a shortcut, and your dumplings will taste like homemade. I love chicken and dumplings, and I've tried both shortcuts. Believe me, frozen biscuits are so much better than canned. Happy cooking!

I bet your home made dumplings are to die for, good easy alternative. You really give great instructions, another good way to thicken is 1 part softened butter to one part flour mixed together well, whisked into pot, I use this on stews and corn chowder, ( does not add extra liquid is the benefit) good alternative for some one who may not have cornstarch.

Years ago, all I had were crescent rolls. I pinched those up and dropped them in my thickened, seasoned chicken and broth and what a surprise - they were excellent. I still do that to this day. Just a thought.

I've always had compliments on my CKN & Dumplings and I always put (1) can cream of chicken but I also put (1) can of cream of celery. I usually make a full 5qt. Pot full! Lots of leftovers! I also use the (4) pack of cheap biscuits and spruce them up

Tell the truth sister! I boil my own chicken too! But you taught me something about flouring and rolling out the biscuits! Why didn’t I think of that! Thank you!
