What about if I use mortar to fill it up all the way

I would not use mortar... it would be better if it was self leveling and flexible to allow small movement in the earth overtime

I followed your video and it worked like a charm!! One question, I got some excess caulk on my recently resurfaced pool deck. It’s a chip system with a sealer on top. Do you know the best way to remove the caulk that got on some of the surface?

What if you over pour ?

It's going to be hard to clean up an over-pour unfortunately. It's best to go slow and make sure you don't do that.
