Hello from Boulder! I made applesauce over the past weekend and feel I've got a much easier method you may want to try. Simply quarter the apples, sprinkle the slices with cinnamon and throw them in the FD. I left the skin on the apples. Once the apple slices are done, put them in the blender and turn it to dust (or whatever consistency you wish). I'm storing mine in a mason jar. When I want some applesauce, put an amount in a bowl and add water. It's ready to eat within seconds! One of the perks I noticed after watching your video is that I didn't need to mess around with the plastic dividers. If others have comments or other experiences, please reply and share!
The fruit strainers work real slick. Quarter the apples into a big pot add a cup or two of apple juice once soft just run them through the strainer into your trays. I owned a 'Squeezo' brand at one time. My new one is not that brand and is a little hard to use but still makes tomato juice, apple sauce etc.
Alaska here, freeze dried applesauce bites. Ordered the green tray dividers and love them. Your instant pot seems interesting, but I use a Victorio mill grinder and it makes making applesauce super easy. Thanks, the grandkids are going to love this snack for sure!
You mentioned wanting to nail the rehydration - consider pre weighing the product. Then you get a post freeze dried rate. The difference for many products is the amount of water needed to reconstitute to “the same” product. It won’t work for everything of course; think steak… you won’t want a watery steak, just a wet one. On many foods, particularly the freeze dried meal types, it works pretty darn well. I love the dividers I got from you for portioning and also pre weighing/post weighing - has made a better freeze drying world for me!
Thank you for this. We got our freeze dryer a month ago. I currently have sliced marinated roast going. We did watermelon to powder for fresh watermelon juice through the winter, have done chicken feet for our dogs, fresh cooked pumpkin, a variety of fruits and ranch seasoned veggies for snacks. It''s just starting apple season locally. I can a year's worth of apple butter, applesauce, & apple slices every year. I bought two Cinderella pumpkins today which I plan to freeze dry fresh pumpkin for pies. I recently freeze dried fresh pears. I really liked doing the pears. They rehydrate beautifully. Taste & texture is almost the same as fresh.

You mentioned in the video to make sure the bottom of the trays are warm to ensure no excess moisture is locked in. It seems every time I run a cycle the very bottom tray stays pretty cold compared to the others. I tested the heating mats on the shelves and those all work. Has anyone else experienced this? Even when I add more time to the cycle it is still always colder on the very bottom tray.
I had it happen twice.. I noticed the food on those trays were a bit thicker than the others, had a bit more weight. I just left them in about 3 hours longer and it did the trick!
Our apples are done, but I'll keep that in mind for next year. Just got done with freeze drying Asian Pears! Used the 16 slice apple corer/slicer that you recommended before, and they turned out great! Just under 24 hours.
I purchased freeze dried raspberries for a buttercream icing and it was absolutely wonderful! I just rescheduled my move in date for the new homestead until the end of October. Ugh!!! Never build when there are supply chain disruptions. I can't have the freeze dryer delivered until I move. As I pack the walls are closing in. I've been very understanding so far but inside my patience was lost about 3 months ago. Almost 2 years to build. Sorry, I'm venting because I just found out and I want to play with my freeze dryer lol. I can't wait to get the fruit trees planted and experiment with different recipes. I'm going to definitely get your cookbook. Love all of the tips!! I'll also look into your MEWE group.
I've found that when you limit the medium trays to 1qt or 1ltr, they dry faster and much more uniform. But you do give up volume and probably overall cost per batch. I heartily recommend ONLY using low sugar or homemade Applesauce. My first go-round was Sam's Club in large jars. I think they should have been marketed as "Sugar Syrup infused with Real Apple". I had to completely clean the entire insides (including shelves and trays), with warm lightly soapy wash rags. In well over 100 batches, I've never had to do that before.
Love your channel. I have a question. My sealed packages do not suck up as tight as yours. I add the oxygen absorbers immediacy and keep them vacuum sealed in a jar when not is use. I have been using mostly the gallon bags and the 300 cc OA.

I have a question. I was going through some of my freeze dried food that I packaged up before I got a moisture detector and the bags were soft instead of crunchy, so I refroze them and ran them through another cycle and made sure all the moisture was removed with my detector. The food looked and smelled good and they didn't have much moisture. I just didn't feel comfortable storing them like they were for long term storage. Do you think they are safe to still use and eat? Thank you.

Have you ever done coffee in freeze dryer? I have green coffee beans that I roast myself. Was wondering if I could grind the coffee beans and put the ground coffee in the freeze dryer?
Rather than guessing how much water to add to re-hydrate, why not get a large syringe and record the amount of sauce one cube holds, then weight that amount before and after freeze drying. The difference in weight is your amount of water. Only have to do this one time.

Powder is great for lots of things. I have not tried it with applesauce, great tip
I want applesauce for baking basically. If we cannot get oil for baking applesauce works great. I like this idea.
I say adjust the sweetness after the rehydration process if you like the natural sugars.

the bottom tray is typically the last to get done. If it is still cold add, some time until it's warm

Did ours again this year and they are amazing! Took closer to 30 hours for me. I dont load the trays heavy either.
If you are in a humid environment, cycle times can change quite a bit

Have a batch in the freeze drier right now, followed your recipe except used apple juice instead of water, didn't need any sweetener.

In most of my videos, I use a vacuum chamber sealer. An oxygen absorber will only remove oxygen, not air volume.

You could absolutely do that. They are pretty dry, so bring water. The actually stay in the cube form pretty well. I was expecting a crumbly mess.

Add a little lemon juice to your apple sause so the color does not darken
any citric acid (found in citrus fruits) is helpful in many things that typically turn brown 👌
Why cook the apples before freeze drying to make apple powder?
You would not need to other than wild apples can give you a wicked stomachache if raw.
