- The Kumquat Quest is a great cocktail to showcase the flavours of a Kumquat (see notes below). Refreshing and tart whilst the addition of Grand Marnier to this vodka cocktail, enhances the citrus notes.

Great video Steve! I was so confused when I saw that you squeezed one and a half lime for that 15ml. I am glad that this was a mistake. With all that hospitality is going through, the last thing we need is 10 ml limes! 😅
Haha, I know!! They were pretty small!
Kevin, just watched your video on Kumquat Super Juice. If I can get my hands on some Kumquats, I am going to try and make this drink subbing lime juice for Kumquat juice. Very nice.
Love the ingredient list on the top left corner of the video. Keep it up Steve! I'm glad to have you as my inspiration on my bartender journey.
Couldn't stop salivating all the while as you made that... lol
I was salvating reading this comment thinking about kumquats😂
@@KaitlynSallee damn.....
Wow, this really brought me back to when I was a kid and me and my brother would eat the kumquats off my grandfather's tree. They are kind of hard to describe, but they taste a little like a bitter orange. They're very tart, so I feel like a kumquat simple syrup would probably be amazing in this drink. Thanks, Steve!! Love your videos.
Gotta try this with some Guyana rum!
I tried this with fresh Kumquats and I think the original composition is little stronger for my taste. Kumquats have most flavor in their zest/peel than inner pulp. So, I didn't like muddling the whole kumquats. Rather, I cut them into halves, took the seeds off and then muddled mildly (whole ones require strong muddling making the drink little bitter). I also reduced vodka from 60ml to 45ml (I used a French vodka and 60ml was making my drink stronger). Rest of the ingredients were kept as suggested by Steve.
Overall, I enjoyed this drink. It is zesty, but not sour (kumquat zests are sweeter and less stronger than lemon/lime zests), refreshing :)
Thanks Steve for bringing it to us. :) +1
Steve..you always make my day. I want to be a bartender. You make it look so easy...and BTW...you get to try what you make.
I like your sentiment but I don’t think he makes it look easy. What makes it look easy is his arms and chest, unless you have those I don’t think it is going to be easy.
Love your work and the easy open spirit of your videos ☺️!
You look so different now with short hair and short beard! But you look happy!
Stay safe and healthy and happy with your lovely wife Kat, and your family and friends. Have a great day.
I've gotta say, kumquat is an ingredient I haven't played with much. This looks like a great place to start
Kumquats are sour, but you’re doing a great job adding the Demerara syrup, lime adds a different kind of sour taste to it, but then again grand manier balances it all out. Gooooooood drink 🥤... cheers
They are not sour when you eat them hard and you chew the whole thing. The skin is very sweet and the juice inside is sour, but when you eat the whole thing it's a very sweet fruit
The muddler is sick!!!
Can one use fresh kumquats?
Fresh kumquats skin is sweet the flesh and seeds are tart.
This was awesome man! Great episode as always 🤘🏼
We just missed out in the US...past the season..but definitely next year I am trying this..and as you mentioned...make a syrup out of the kumquat. I love the tart..sweet of the fruit.
I need to prepare that awesome recipient in the right glass of course;Steve a bar tour please... layered cocktails or campari/ aperol compilation (5-cocktails video) !!!!
Used to have a Kumquat tree , my kids loved eating them , but believe me , they are naturally bitter! Nice video thanks Steve.
Had to look up what a Kumquat actually was after watching this video. This looks like a delicious and unique cocktail, I think I wold like it more with the syrup instead of the actually fruit.
Had never heard of Kumquats before!
Kumkuats are available everywhere in Fiji. Mostly used when eating traditional fijian style food.
U can also grow them in Australia
Ive actually made some kumquat liqueur some ive cleared and some have been sitting in a jar with the kumquats for about 2 -3 years, waiting to be tried. 😋
Bet that came out great! 👍
Nice cocktail,i should try this one😋
I've seen them in the store before but only ever tried them once, very tart and sour but I imagine they would pair well with the demerara sugar and G. Marnier.
Video suggestion: preparation of some of these exotic fruits. I know you've done a video on garnishes but I think you could make one on prep for various odd things. Dragon fruit, kumquat even kiwis. I can handle a kiwi but haven't got a clue what to do with some if the others. Pomegranates, starfruit and coconuts (whole) are good ones too
I second that idea. Another good one. I imagine though, w/over 400thousand+ viewers worldwide, there's going to be quite a large variety of local fruit varieties. It's one of things so appreciated about STBs appeal, he has a great understanding of his viewership across continents. I.m.h.o.- I enjoy local fruits uses in cocktails immensely! Beyond fruit Daiquiris as his knowledge demonstrates. Kiwi; DragonFruit; citrus varieties; kumquat; passionfruit; lychee; berries; etc all good. Dragon fruit & Kiwi are subtle enough - this recipe might work well (adjusting sweet syrup per fruit’s natural fructose levels). please try it and let us know?
Loving the content Steve! we definitely gotta try this out on the channel! Cheers :)
Thanks guys! What you working on?
Another great creative recipe video! TYVM. This cocktail recipe will also work well with fresh calamansi citrus, or even sweeter lychee/passion fruit, etc (or your regions similar soft flesh local fruit(s) and of course if you can find it, please use potato based quality vodka!
I'd be curious to see Rum Kumquat Mojito: another Kumquat combination using Rum spirits in place of vodka if you prefer.
Instead of going through the hassle of making the fruit into a syrup, I personally would have made the drink in the shaker and then fine strained it. I do this with all cocktails I make using fresh fruit like blueberries, raspberries, etc. You lose nothing but the skin and pulp. Cheers!! 🥃
Makes sense and means less fruit in your teeth. 🤣
Except:They were given Kumquats in a syrup. Great for gift ideas! Depending on the soft fruit used (Kumquat’s great example) flavors continue to marry in a tall cocktail as it's sipped, adding to balance. Even with soft berries, I find leaving them in bottom of tall cocktail glass like this enriches the profile over a quick berry rinse in a shaker. All personal tastes?
@@hualani6785 it’s definitely preference over technique when it comes to cocktail making. I tend to pulverize my soft fruit to the point where it’s basically just juice, seeds and skin. I also tend to use very ripe fruit. I don’t live much room for the drink to evolve. That said, I think you make a valid point, depending on your preference. Cheers!!🥃
Not sure if his were alcoholic but if they were i would have just used the syrup in the coctail and then maybe cut a few slice to go in the drink instead of mudling them
I agree.. if I had fresh fruit - middle and strain would be the way to go. Bonus of being in a syrup is that they have a long shelf life 👍
Nice to see finnish spirits in cocktail videos! Is Finlandia widely available there?
Yep, can get it everywhere in Australia..
I love me some fruit in a cocktail. I think you went for the full 30 ml on lime juice because you were thinking about the syrup the Kumquats came in.
Love what you do!! That's beautiful, cheers!!!
IVE NEVER HAD A KUMQUAT BUT I'D TRY IT IN THIS DRINK!
Kumquats are amazingly great. Try making a gin & tonic w/2-3 kumquats sliced in half and gently squeezed into the drink. (No lime).
I call it a gin-quat. (You eat them whole, skin and all.)
I've seen that a few times here in Germany. Great way to serve
4 pcs fresh Kumquat (muddle)
15ml Vanilla
30ml Mango juice
30ml pineapple
Shake and top up with
Ginger Beer
Hi steve try this ! Non alcoholic sweet and refreshing ! Cheers!
just made a glass , nice !!!
Ohh nice call , definitely have to find a way to buy kumquats , chinatown here i come.
Cheers mate
Well in means you need the smoothie size surfside sips that allow for thicker drinks...
Yes! I do have some but didn’t think to grab one!
Every January, there's a Kumquat Festival where I live in Florida. They're an acquired taste, really. Not everyone can eat them in their natural state because they're tart as hell. But in pies, jellies, dressings, etc. they're more popular. Personally, I'm not that keen. But I may try this drink when they're in season again. I think I'd make a puree out of them. I'm not keen on chunky cocktails, either.
PS: Do you guys spell "Demerera" like that out there?
Lol, just a typo 😂
@@StevetheBartender_ Sorry. I wasn't trying to be 'that' guy. 😁
I have kumquat liqueur and not kumquats, what to do with it instead of the fruits in this recipe?
A liqueur has added sugar... so you will need to lower the demerara.. all depends on how sweet the liqueur is..
finally an australian channel, where do you get your grog from? ive found that dan murphys are the best collection but these american channels use bottles we cant get here.
Nicks.com.au is a good one.. and if you’re after rums, check out Quittin’ Time too!
Nice vid steve
Since you used kumquats that were in a syrup and kind of confit kumquats, how long do you suggest we to keep them in a sugar syrup, prying making the recipe? Thanks. Cheers!
Tbh, I would have no idea... fresh would work just as well as ‘candied’ kumquats I think.. 👌
@@StevetheBartender_ Thanks Steve. Then I will try it with fresh ones as soon as I see them in the shop. Cheers!
Where do you get all of your glasses from?
I run an online barware store so get samples and buy wholesale from a few companies.. 👍
What's the status of the Cocktail App for iPhone? :)
Very soon..
Looks delicious!
I actually have fresh Kumquats, how would you adjust the recipe according to that?
I think the kumquats were cooked in syrup to make them sweeter. There's a famous Italian or Spanish Komquat ice cream that's as old or older then my grandmother, and thiese Kumquats are already cooked and soaked in syrup sugar
Can you do a jack and coke video?
2oz Jack to 4oz Coke over ice in a highball glass and you'll be in good shape!
How many vids do you usually make in a day?
It varies... usually between 2-5..
What syrup was the kumquat sitting in?
I didn’t make it so not 100% sure... assume it was just a simple syrup... the tart fruit flavour imparted in the syrup and it has a pretty intense flavour..
@@StevetheBartender_ Thanks! I'll try both variants - one with kumquats in simple syrup and one with fresh kumquats.
Cant wait for my young Kumqat tree to bare fruit. This looks amazing
Definitely looking forward to trying this next time I see them at the store
6:14 me pretending I'm a coctail connoisseur all the while getting my booze fix ;)
are those fresh kumquats or are they soaked water?
They look like they're in a sugar syrup
Kumquats have quite an unfortunate name if you use your imagination. But either way, nice and creative cocktail and video, Steve!
Here I am with a case of kumquat's and no vodka.
Nice :)
Heyy! Can you make a drink with Jack Daniels Apple??
Have you ever tried crown royal apple?? Its pretty good...
Don’t even think it’s available in Australia..
Wow I’ve never been this early......
He reminds me of number one from the umbrella academy
LOL...now I can't unsee it! 😂 Dying for season 3
I haven't tried this kumquat syrup recipe but I reckon it'd work a treat.

Still such a disgusting name 😂
