My Mom use to make this-add a little more vanilla and a little more oil and instead of jam cut up fresh strawberries with a little sugar-then mix that in the batter and bake . Powder sugar and milk topping- it comes out like ooey-gooey WONDERFUL cake.

I made this with King Arthur 1/1 gluten free flour mix and it is a huge hit! Even our non-gluten free dessert lovers can’t tell the difference. Thank you! 😊

It's 4: 17 in the morning here in Virginia, and the days are getting colder, but some days are normal and cool, but I just wanted to say I love this recipe, but I'm leaving out the jam , and make this a regular cake . and make the cream cheese frosting. but u can do any flavor. Lemon, and chocolate. or strawberry cream cheese frosting. Thanks . but my favorite is coconut cake, endless possibilities .😊
I like the look of the basic lemon cake. Light, tender and moist. you could use any fruit you like. Blueberries for instance. Sugar coated whole cranberries.
