My dear, you had me at "PINEAPPLE". Three reasons why I like this recipe: 1. It's easy and even a person like me who screws up in the kitchen is confident enough to try cooking this dish. 2. I currently have too much flour in my pantry and this will be a good excuse to use it. 3. I work in the hospital and there is constantly potlucks. i always volunteer to bring drinks, cups, paper plates, and utensils. Bringing this to the potluck graduates me to another level.

Ms. B! I’ve been eating this cake since I’m 6, and baking it since I’m 13. I’m now 70. I still have my mom’s handwritten recipe card. She wrote simply “Best Cake” at the top of the card!! She let me make it all through junior and senior high school because it is not only easy, it’s also relatively inexpensive to make. It’s almost fool proof. Never had one flop. I like to SLIGHTLY over-bake it. It’s so moist it never dries out, and I like a nice brown edge and bottom. Peace and blessings…

My mom made this for years it was called Hawaiian wedding cake and was the same except had 1 cup of coconut and chopped walnuts mixed in it. It is easy and tasty.
Exactly the way I do it, ya gotta think ahead a little to save some time. I do carrot cake the same way to save on washing dishes. Make the icing in the cuisine art first. Scrape that out then grate the carrots and mix the rest of the cake in there. That way, you only have ONE thing to clean.🍍👍

I love this cake its so easy to make. I cut the sugar in half for the cake and the frosting. Add vanilla and 2 tablespoons of milk and I add walnuts to the cake. Yum Yum.
Oh no so surprised that even with that amount of pineapple the cake was tasteless. Pinespple and coconut goes together well so I may do that and add a little lemon juice to the pineapple to bring the flavour out more

I love the recipe for pineapple cake and hit if you mix the wet ingredients with the powdered sugar by hand before you finish it off with the mixer it won't fly up like that that's a little note 😉
I use fresh pineapples instead of the can because that's what I had. My cake turned out delicious thank you so much for this recipe. I'm going to definitely share this with my granddaughter who is 13 years old and loves to cook.
I did not use any of the juice of the pineapple I use one of those spiral pineapple slicers and sliced it that way and then just use them they were the same size pretty much as the canned pineapples.
I have made Swedish Nut Cake, a version of this cake from All Recipes, for many years. People love this cake and I have shared the recipe over 30 times. I do cut the sugar in the cake by half a cup. A half cup of walnuts and two teaspoons of vanilla are added to the cake batter in my recipe. The frosting has an additional 3/4 cup of powdered sugar and more walnuts on top. The biggest difference is the frosting is put on the cake as soon as it comes out of the oven. The frosting initially melts but then sets back up as the cake cools. The first time I made the cake, I thought the directions to frost the hot cake were a mistake so I waited to frost the cold cake. The second time I followed the directions and frosted the cake right out of the oven. The directions were correct. Frosting on the hot cake is only way to go.
I agree with Connie. I add 1 cup chopped walnuts and I also spread icing on hot cake. It melts right into the cake. Delicious! And so fast and easy! One of my very favorites

As a mother of 2 very active kids I made this but took a shortcut. I use a box of Duncan Hines angel food cake mix and add the 20 oz can od crushed pineapple, stir and bake same as here. It's also a weight watchers recipe (where I got it.)
I made this cake recently for a party and forgot to put the eggs in! Believe it or not, I cut it into bars and iced each one and took it to the party. It was a big hit lol I added a cup of walnuts to mine. They ate every piece and wanted the receipe. I’ve been making this cake for over 30 years.

My ex mother Lin law gave me this recipe back in the early 80’s in Indiana. It’s the most moist cake I have ever had. The pineapple juice is the trick. It’s a crowd pleaser. When I brought this to any event I came home with an empty pan! It was always easy to remember even without your recipe because it was 2 of everything except the pineapple. Yes the pineapple sugar keeps it from sticking. All the sugar in the syrup also makes it look darker than most cakes.

When I make cream cheese icing, I find it easier to take the butter & cream cheese out if their packages when cold & put in bowl. When room temperature whip it up. Then add your powder sugar. Super easy😊.

She can do it himself now and got a kick out of it when he did not bust the yoke. Now he has an option besides cereal. You have to get them when they are young. Once they get older they loose interest fast.
My husband does not like pumpkin pie so I have always made pineapple upside down cake at Thanksgiving. I think you just gave me a new option for this year. Definitely going to give this a try! i made this cake last night wow. we loved it, super easy to make, very moist with those little bits of pineapple to chew. made it as instructed with the pineapple juice and baked in exactly 35 min just like yours. no fail receipt. if you love frosting better double it like i did and added more sugar to taste. perfect easy cake that's light and has a very downhome look, feel, and taste.
Hi Beverly, I make this cake as well, the only difference is that after the cake is done, I poke it and add a can of pineapple tidbits with the juice on top. And with my frosting, after mixing the cream cheese frosting, I fold in a small tub of cool whip. It’s a lighter frosting and wonderful on a hot summer day! 😊
I wish I had seen this before I made this cake. I was expecting the cake to have the tartness of pineapples, but it didn’t. Next time, I try it your way.
I need to not use that heavy syrup. I will try with pineapple in own juice. I make peach cobblers without heavy syrup peaches. We like it better. I like the idea of poking it and adding pineapple and uice. I make a lemon cake that you poke and add lemon glaze. It is so moist and delicious. My husband loves pineapple. So do I!!
The cake was wonderful ,a little tip. always put your butter or cream cheese in the dish first, that way you don't lose any or have to scrap when it's getting soft 💗

Looks delicious, going to try it soon. a few pointers I remember from early days learning under my grandmother- its best to crack eggs in a separate bowl (in case you get a rare rotten one, or piece of shell) whisk them together, mix with the sugar first, then add that to the flour so everything will mix together evenly. I agree, i always break my eggs in a separate bowl and whisk them before adding. Plus I sift the flour and sugar together, it helps combine them in one step adding a little air at the same time.
This is the recipe my cousin makes [from her mom]-- but she mixes walnuts in-- and a few years ago, she toasted some walnuts and sprinkled them on top of the wonderful cream cheese frosting! This cake is sooo hard to stay away from-- and it doesn't even have chocolate in it!🤯 So glad you're doing this because I have misplaced my copy of the recipe and keep forgetting to ask my cousin! I have used this recipe for more than 30 years. My recipe calls for 1 cup of chopped walnuts in the batter, then after you do the icing you put about 1/2 cup of ground walnuts across the top. This has been a favorite with our family, take to all potlucks.
I've been making variations of this cake for over 40 years and it's great! I really like this one because it's fast to whip up in one bowl. No mixer necessary. I use a metal 13x9 and lower the gas oven temp to 325°. This one freezes beautifully, too. The frosting is really yummy! 😋😊
Hi Beverly. I made this cake last weekend for a fundraiser bake sale in an aluminum 13x9 pan and didn't have to spray that either. On the frosting, I added some chopped walnuts. I’m 72 and have had this recipe since my mid 20’s. It has many names but the same ingredients. I’ve always known it as “Easy Cake”-and that’s a pretty good name for an “easy” recipe, lol. I love this cake!
I have also made this for years, but my recipe calls for chopped walnuts and in place of the vanilla extract I add almond extract. The trouble with adding walnuts is you need to wait for a day for the nuts to mellow. When my daughter was in college she wanted to make the cake for a friend’s birthday, but she was in a dorm and couldn’t leave the cake in the shared kitchen. She changed the recipe to adding coconut to the cake mixture and added chopped Macadamia nuts to the top of the cake. She didn’t bake it as long. She called it a piña colada cake. Either way the cake comes our great. Hope you try making these cakes too.

I’ve made this cake twice. It’s great and it’s easy! I switched crème cheese for sour cream. My family likes the slight tart accent with the sour cream. I take it to potlucks and come home with an empty dish everytime.
I love pineapple too. My wife loves carrot cake & it has a tendency to get dry so instead of a cup of water we add a cup of crushed pineapple in juice & it keeps the cake moist.

Remember to save that butter wrapper in the freezer in a Ziploc. If you ever need to butter a bowl or a dish or a baking dish you can use that to do it with the leftover residue on the wrapper of butter.

I make a pineapple cake similar to this only mine's even easier. It takes 1 can of crushed pineapple and 1 box of any brand of angel food cake mix. Bake that for about 40-45 minutes. To frost it you use 1 can of crushed pineapple, 1 small tub of whipped topping and 1 small box of instant vanilla pudding. Keep the frosting in the refrigerator until it's time to serve and frost the cake at serving time. This cake comes out super fluffy and tasty.

I love this cake. Today I used pineapple tidbits ( can't find crushed) and mixed about 1/2 cup of raisins. The store had no powder sugar but I had some downstairs in the cellar. I wish I could gi e this recipe 2 thumbs up.

To avoid the hassle of scraping off soft room temperature butter and cream cheese is to unwrap the chilled butter and cream cheese place in a bowl and cover and let them both come up to room temperature together.
I enjoyed this very much but live by myself and will. Make the recipe then put half dry ingredients in bag in fridge make full rest recipe of icing then refrigerate half and fix half in an 8-in square pan and I should get two small cakes out of it just big enough for me cooked in my little baking oven. My husband taught me about this cake some twenty-five years ago. Also known as ‘Mexican Wedding Cake’ both the cake and/or the Icing are delicious with chopped Pecans added. And you can leave the cake to cool on a rack, in or out of the pan and ice it later. Enjoy!

I love pineapple in anything. When I was a kid my mom would cook a pineapple pie with meringue on top. Every Thanksgiving I make it. I am the one that loves it most. It has become a Thanksgiving tradition.
I've had this recipe over 50 yrs. No need to dirty a bowl. DON'T USE A MIXER. Do NOT GREASE PAN. Stir ingredients WITH A SPOON in your 9x13 cake dish. Great as coffee cake. I've never made the cream cheese icing (but I do love it). Gave recipe to friend; she decided it had to be mixed, next day she said, "You were right - No mixer."

The cake is very moist. AND no bowls or mixer to wash!!! I throw pecans in, Mmm. This is great for breakfast too. Let me know what you think after you make it.

A suggestion: put the butter and the cream cheese in the bowl in the bowl while it’s still cold. That way you won’t have to scrape the messy wrappers.

Do you mix the pecans in the mixture or lay the pecan on top before you put the cake in the oven with this cake can you make it like a pound cake I hope so please let me know

I love this cake its so easy to make. I cut the sugar in half for the cake and the frosting. Add vanilla and 2 tablespoons of milk and I add walnuts to the cake. Yum Yum.

Oh no so surprised that even with that amount of pineapple the cake was tasteless. Pinespple and coconut goes together well so I may do that and add a little lemon juice to the pineapple to bring the flavour out more

I love the recipe for pineapple cake and hit if you mix the wet ingredients with the powdered sugar by hand before you finish it off with the mixer it won't fly up like that that's a little note 😉

I use fresh pineapples instead of the can because that's what I had. My cake turned out delicious thank you so much for this recipe. I'm going to definitely share this with my granddaughter who is 13 years old and loves to cook.

if you use fresh pineapple, what should the the weight of the pineapple be and how much of juice?
I did not use any of the juice of the pineapple I use one of those spiral pineapple slicers and sliced it that way and then just use them they were the same size pretty much as the canned pineapples.
My granddaughter loves to cook too, she turned 13 last December. Granddaughters ARE WHAT GOD PUT US HERE FOR I THINK. LOL

I have made Swedish Nut Cake, a version of this cake from All Recipes, for many years. People love this cake and I have shared the recipe over 30 times. I do cut the sugar in the cake by half a cup. A half cup of walnuts and two teaspoons of vanilla are added to the cake batter in my recipe. The frosting has an additional 3/4 cup of powdered sugar and more walnuts on top. The biggest difference is the frosting is put on the cake as soon as it comes out of the oven. The frosting initially melts but then sets back up as the cake cools. The first time I made the cake, I thought the directions to frost the hot cake were a mistake so I waited to frost the cold cake. The second time I followed the directions and frosted the cake right out of the oven. The directions were correct. Frosting on the hot cake is only way to go.

I agree with Connie. I add 1 cup chopped walnuts and I also spread icing on hot cake. It melts right into the cake. Delicious! And so fast and easy! One of my very favorites

In my version I added pineapple and chopped pecans. I’m sure it’s delicious no matter what! I also think coconut would be good to add!

As a mother of 2 very active kids I made this but took a shortcut. I use a box of Duncan Hines angel food cake mix and add the 20 oz can od crushed pineapple, stir and bake same as here. It's also a weight watchers recipe (where I got it.)

I made this cake recently for a party and forgot to put the eggs in! Believe it or not, I cut it into bars and iced each one and took it to the party. It was a big hit lol I added a cup of walnuts to mine. They ate every piece and wanted the receipe. I’ve been making this cake for over 30 years.

My ex mother Lin law gave me this recipe back in the early 80’s in Indiana. It’s the most moist cake I have ever had. The pineapple juice is the trick. It’s a crowd pleaser. When I brought this to any event I came home with an empty pan! It was always easy to remember even without your recipe because it was 2 of everything except the pineapple. Yes the pineapple sugar keeps it from sticking. All the sugar in the syrup also makes it look darker than most cakes.

When I make cream cheese icing, I find it easier to take the butter & cream cheese out if their packages when cold & put in bowl. When room temperature whip it up. Then add your powder sugar. Super easy😊.

She can do it himself now and got a kick out of it when he did not bust the yoke. Now he has an option besides cereal. You have to get them when they are young. Once they get older they loose interest fast.

My husband does not like pumpkin pie so I have always made pineapple upside down cake at Thanksgiving. I think you just gave me a new option for this year. Definitely going to give this a try! i made this cake last night wow. we loved it, super easy to make, very moist with those little bits of pineapple to chew. made it as instructed with the pineapple juice and baked in exactly 35 min just like yours. no fail receipt. if you love frosting better double it like i did and added more sugar to taste. perfect easy cake that's light and has a very downhome look, feel, and taste.

Hi Beverly, I make this cake as well, the only difference is that after the cake is done, I poke it and add a can of pineapple tidbits with the juice on top. And with my frosting, after mixing the cream cheese frosting, I fold in a small tub of cool whip. It’s a lighter frosting and wonderful on a hot summer day! 😊

I need to not use that heavy syrup. I will try with pineapple in own juice. I make peach cobblers without heavy syrup peaches. We like it better. I like the idea of poking it and adding pineapple and uice. I make a lemon cake that you poke and add lemon glaze. It is so moist and delicious. My husband loves pineapple. So do I!!
The cake was wonderful ,a little tip. always put your butter or cream cheese in the dish first, that way you don't lose any or have to scrap when it's getting soft 💗

@@reneegordon506 I totally agree with you. I followed the recipe (word for word). The frosting was excellent, but no one like the cake, itself. Mine did not come out moist, either.
Looks delicious, going to try it soon. a few pointers I remember from early days learning under my grandmother- its best to crack eggs in a separate bowl (in case you get a rare rotten one, or piece of shell) whisk them together, mix with the sugar first, then add that to the flour so everything will mix together evenly. I agree, i always break my eggs in a separate bowl and whisk them before adding. Plus I sift the flour and sugar together, it helps combine them in one step adding a little air at the same time.
This is the recipe my cousin makes [from her mom]-- but she mixes walnuts in-- and a few years ago, she toasted some walnuts and sprinkled them on top of the wonderful cream cheese frosting! This cake is sooo hard to stay away from-- and it doesn't even have chocolate in it!🤯 So glad you're doing this because I have misplaced my copy of the recipe and keep forgetting to ask my cousin! Yes the nuts are very good in it, but I have family members that cannot eat them so a lot of my recipes I leave them out when they are home.

Do you ever have that problem-- and possibly a suggestion on what we're doing wrong (can't ask original family anymore) bc, honestly, we know we shouldn't have to make extra. I've been making variations of this cake for over 40 years and it's great! I really like this one because it's fast to whip up in one bowl. No mixer necessary. I use a metal 13x9 and lower the gas oven temp to 325°. This one freezes beautifully, too. The frosting is really yummy! 😋😊

I’m 72 and have had this recipe since my mid 20’s. It has many names but the same ingredients. I’ve always known it as “Easy Cake”-and that’s a pretty good name for an “easy” recipe, lol. I love this cake!

I have also made this for years, but my recipe calls for chopped walnuts and in place of the vanilla extract I add almond extract. The trouble with adding walnuts is you need to wait for a day for the nuts to mellow. When my daughter was in college she wanted to make the cake for a friend’s birthday, but she was in a dorm and couldn’t leave the cake in the shared kitchen. She changed the recipe to adding coconut to the cake mixture and added chopped Macadamia nuts to the top of the cake. She didn’t bake it as long. She called it a piña colada cake. Either way the cake comes our great. Hope you try making these cakes too.

I was given this recipe at least 45yrs ago, the only difference is I mix all the cake ingredients in the pan I cook it in & I add some chopped walnuts. The cream cheese frosting...yumm! Best cake ever! 💖

I’ve made this cake twice. It’s great and it’s easy! I switched crème cheese for sour cream. My family likes the slight tart accent with the sour cream. I take it to potlucks and come home with an empty dish everytime.
I love pineapple too. My wife loves carrot cake & it has a tendency to get dry so instead of a cup of water we add a cup of crushed pineapple in juice & it keeps the cake moist.

Remember to save that butter wrapper in the freezer in a Ziploc. If you ever need to butter a bowl or a dish or a baking dish you can use that to do it with the leftover residue on the wrapper of butter.

I make a pineapple cake similar to this only mine's even easier. It takes 1 can of crushed pineapple and 1 box of any brand of angel food cake mix. Bake that for about 40-45 minutes. To frost it you use 1 can of crushed pineapple, 1 small tub of whipped topping and 1 small box of instant vanilla pudding. Keep the frosting in the refrigerator until it's time to serve and frost the cake at serving time. This cake comes out super fluffy and tasty.

I love this cake. Today I used pineapple tidbits ( can't find crushed) and mixed about 1/2 cup of raisins. The store had no powder sugar but I had some downstairs in the cellar. I wish I could gi e this recipe 2 thumbs up.

To avoid the hassle of scraping off soft room temperature butter and cream cheese is to unwrap the chilled butter and cream cheese place in a bowl and cover and let them both come up to room temperature together.

I enjoyed this very much but live by myself and will. Make the recipe then put half dry ingredients in bag in fridge make full rest recipe of icing then refrigerate half and fix half in an 8-in square pan and I should get two small cakes out of it just big enough for me cooked in my little baking oven. Thanks for this I enjoyed it very much.

I made this yesterday with Paula's recipe but in her video she didn't say "soda" so I baking powder it still came out fabulous & I also had to cook it a little (bake) longer. So, so GOOD💜

My husband taught me about this cake some twenty-five years ago. Also known as ‘Mexican Wedding Cake’ both the cake and/or the Icing are delicious with chopped Pecans added. And you can leave the cake to cool on a rack, in or out of the pan and ice it later. Enjoy!

I love pineapple in anything. When I was a kid my mom would cook a pineapple pie with meringue on top. Every Thanksgiving I make it. I am the one that loves it most. It has become a Thanksgiving tradition.

I've had this recipe over 50 yrs. No need to dirty a bowl. DON'T USE A MIXER. Do NOT GREASE PAN.
Stir ingredients WITH A SPOON in your 9x13 cake dish. Great as coffee cake. I've never made the cream cheese icing (but I do love it).
Gave recipe to friend; she decided it had to be mixed, next day she said, "You were right - No mixer."

@The CRAMPTONS Absolutely. I put mine in 9x13 pyrex. Looks like a big banana bread. One of those recipes that tastes better as the days go by. I've never used cream cheese icing. The cake is very moist. AND no bowls or mixer to wash!!! I throw pecans in, Mmm. This is great for breakfast too. Let me know what you think after you make it.
