A note that my mom taught me: temperature is important in candy making, but temperature (mostly) is based on what water boils at. And water boils at different temperatures depending on your elevation. She told me that when you make a candy recipe in a new place, you should first boil water with a thermometer to see what temperature it boils and adjust accordingly.
Sohla is the best when it comes to baking and tempering chocolate. I remember watching Claire in the BA test kitchen and she'd often help when it comes to tempering chocolate. lol
Seeing Friends on Binging always makes me excited and happy to my core. My first ever episode of Binging with Babish was the Moistmaker, although years ago, I can so clear remember clicking the video but not knowing that it will change my life.... Thank you for creating and doing Binging with Babish.. Life can be terrible at times, the rain can really start to pour but when things return to normal Babish will be there for you

I've been in a really deep depression due to everything that had happened in my life in 2020 (funnily enough, none of it covid related) and discovering your TH-cam channel (i've been out of the loop for four years lol) has drawn me out of it and reminded of me of my happy place. For over two years, I haven't really set foot into my kitchen, despite being in food service since I turned 18. Since finding you a few months ago, I've been happier and more ambitious. So much so that I've decided to genuinely pursue a career in cuisine. So, long story short, you've got me cooking again and delivering to the people that I love what I love. Thank you.

I've started just making chocolate shell instead of tempering, it's way easier. You just melt chocolate and put in some coconut oil, done. And it makes a crackly chocolate coating on the outside.
I love youtube. I've learnt so many awesome techniques through BCU and other channels that I'm able to apply in my cooking. I'd be lost without channels like this! Thanks!
She should watch Ann Reardon's tips on tempering chocolate, after I watched her video it made so much more sense, and she has multiple techniques, one where she just adds cocoa butter crystals to melted chocolate to recrystalize it, way easier than the heating and cooling method.

It speaks very well of Andrew's hosting abilities that I watch episodes of BWB based on shows I've never seen, nor care to see, possibly even outright dislike, and yet still greatly enjoy the BWB episode and want to make the thing from it. BWB is among the best cooking shows of all time, whether on TH-cam or on TV.
A hint I picked up from a pastry class I sat in on: put a electric heating pad covered with aluminum foil under the tempered chocolate while you are dipping. Keeps it at temp until you are done.
Worked at a chocolate store for a bit over 4 years and all the chocolate bits were spot on. When you started dipping I said that he should use a fondue fork, there's no way he doesn't have one of those. Lo and behold, he busts one out and gets an "Atta boy!" from me. I miss working with chocolate regularly.
As an uruguayan I strongly disagree. Dulce de leche has a distinctly different flavor than that of caramel. They are both great, but the flavor is not comparable

there is a product that makes tempering easy. It is pre-tempered cocoa butter that you mix into melted chocolate in a 1% ratio and it tempers the chocolate for you.
