  • Water bath and pressure can green beans. Here in Lancaster P.A, to water bath green beans is the norm. It is also very much in the Amish and Mennonite culture to pass these methods down. I honestly love both methods as it gives me a lot of flexibility.This Amish Canning series is the result of an interview that I had with an Amish woman and her family. Please know that all of these Amish recipes and techniques (concerning canning things that would normally be pressure canned) are considered REBEL canning recipes and are NOT USDA approved!!! Please do your own research and understand that you are always canning at your own risk.     Gotta be honest - I’m 48. I just learned green beans ‘should’ be pressure canned about 2 weeks ago. I was taught to water bath them, and that’s how everyone in the family canned them.

      Uh yeah....I'm 60 and when my kids were young I canned chicken & pork using water bath (my canning books were old vintage editions I'd picked up). I actually just learned about pressure canning over the last year or so watching you-tube. Who knew??? I am thankful wr never got ill and I though that meat was some of the best eating around. I am now working on learning to pressure can too.

      honestly I think thats a huge myth. Pressure canning was designed to shorten the time to can. This was necessary in the wars to feed the troops and to produce enough for everyone.

    I remember as a kid, the whole family sitting around snapping green beans and telling stories. The original snap chat 😂 we canned everything using water bath except meat. Great memories ❤

    In a world where we have to add so many disclaimers...a disclaimer for a disclaimer....it's insane...I am so happy you are still making videos. I find so much inspiration here, thank you. *disclaimer...I know why she says those things...lmao...before the wolves attack...for no reason!!!*

      For her to use the disclaimer is very important because people could try to blame her if their family ends up with botulism and say well she taught me to do it this way but she puts a disclaimer in so therefore it's on them if something happens. Adding the vinegar does change the pH and makes it more acidic which may be the reason why it is safe I cannot guarantee that and neither can she but anything that is high acid can be water bath canned so adding the vinegar would do that. Again it is not recognized by the USDA.

      There’s a lady in the comments that wbs green beans, no vinegar, 1.5 hours… I’m convinced that they have us go soo long to damage the nutrients in our food… I don’t trust any government agency…

      Yeah my mother in law didn't even own a pressure canner. She canned probably for 40 plus years and never used one. I learned a lot from her. She water bathed her green beans and she didn't water bath them for long at all. I also use her method because my family will NOT eat them if I pressure can them nor will they eat them if I put in vinegar. I just made pepper sauce and my daughter left the room from the vinegar smell. lol

    Used my new water bath this afternoon for the first time to actually can FOR THE FIRST TIME. Just let me say that without your videos, I would never have had the faith in myself that I could do this. I SUCCESSFULLY canned five qts and 1 pint of green beans! Thank you so much for your videos. You have no idea how much you help those of us who never thought we could do it! At the age of 59, I am now canning! woohoo! May God bless you and your family. ❤

    I got so excited going through my canning books and I have the 1944 Kerr canning book. I love it. I forgot I used to use it a long time ago. I waterbathed everything years ago.

    AMAZING! The Amish are still alive - and they have water bathed everything for ages. And, they drink fresh milk right from the cow (I raised my kids on this too from one of their farms) and they are alive. They didn't get vaxxed and they are very healthy. And on and on. They cook FROM SCRATCH - even if they have a very heavy diet (sugar, potatoes, corn, etc), their brains are clean compared to a very young adult who eats processed food from the stores.

      I am French and we water bath... Just about everything! This pressure Canning is actually thé odd thing for me! Pressure canner are not readily available either so there you go! Take care!

    I've been water bath canning for some years now, green beans..... no vinegar, I do add the salt and fill with boiling water. Bath 1 1/2 hours. I also can carrots and corn. Love your videos !

    Please keep the series going, you provide lots of great info.
    Suggestion: With the propane tank, especially on long runs, as the tank gets cold from converting the liquid propane to gas propane, it gets to a point where it is too cold to convert (the tank will be iced over). The way to get around this is to place the tank in a washtub of water the water acts as a heat sink to keep the tank warmer, thus the tank can be used longer. Even if the tank starts floating, from its level getting too low, it will continue to convert liquid to gas untill the tank is dry.

    Never heard of adding vinegar to jars of green beans with the water bath method. I understand why you do it though. I learned from an elderly farmer's wife to fill my jars, add salt, and water bath for 3 hours. Always worked great and never had any spoilage whatsoever.

    Love you sharing the rebel canning!!!!!! That's how my inlaws still can green beans. We do 3 hours rolling boil, no vinegar, just salt.

    Thank you for sharing this. My Grandma canned them for many decades and never owned a pressure canner. USDA might disagree, but I think using clean produce and clean and sterile jars make it work. Again...thanks!

      Clean your kitchen well, I still sterilize jars and all equipment I use. I make sure whatever I'm canning is clean, clean! I think clean is the reason I 've never had problems w/ my water bath canned everything.

    When I wash my gren beans, I do it before I cut them up, so contaminates don't get inside the beans. Also I use scissors to cut up my beans. Great video, keep them coming.

    I visited my amish friend today, we were discussing canning she told me that she has even canned her green beans at a higher pressure for 10mins instead of 25mins. In our area we would normally pressure can 10lbs 25 mins but she does 15lbs pressure for 10mins! Lol. She said her mother waterbathed everything. I toured her whole celler and she gave me some hot pepper butter..It was delicious 😋 I love learning new things and older methods are always better in my experience of things!

      I'm surprised you have a amish fr who pressure cans, none herd in Lancaster County pressure can beans, just use the big canner n we get 27 to 32 qt jars in canner. Ive had some young amish married ask me about pressure canning but she was afraid to do on her own that way after getting a pressure canner at a yard sale, lol.

    I live in Middletown and the weather today was awesome. I went to high school in Lancaster and spent a lot of time in the Amish community. Nice breeze and a great day for canning. I'll be doing apples later and in a week or so making apple butter. I just started the canning journey and most of the growing season is over however I will be starting early next year and growing a small garden in Stackable planters. Love your channel and That 1870's Homestead. I've learned so much.

    Doing your beans outside reminded me of my grandma. She used to take her beans or peas and go out under their tree and sit and do them in the nice shade. I miss her a lot! Thank you for bringing back that memory.

    I was today’s year old when I heard the term “rebel canner” on IG. Decided to see what was on YT about the topic…. Now I’m pretty sure this is how my Gran put up her veggies. I’ve tried to replicate her green beans by pressure canning them and have never achieved her yumminess! Thank you so much!!!!!

    Keep up the good work! Water bath canning is absolutely perfect. My mother did this for years which we never had any problems with. She even canned beef with this method.

    I’ve been looking forward to your next video and was hoping you would continue showing us the way you do things. Thank you for staying true to yourself.
    We didn’t get much green beans in our first planting this year, but we did just plant another round in hopes to get enough to can before the winter. I had bought some store bought green beans and canned those, I got 7 qts and had a little leftover and they went vacuum sealed into the freezer. I pressure canned them, but wish I had known they could be water bathed. Your beans are lovely. Both kinds.
    I can’t wait to try doing potatoes!
    Today I’m researching squash and canning them. We have lots of butternut from summer harvest, and just planted four different types of winter squash for the fall.
    If you have any knowledge of canning squash, I’d love to hear it!

    Get the presto electric pressure canner it's used for both water and pressure canning. It's paid for itself no babysitting while pressure canning

    I’m so happy to see you back and water bath canning. You go girl. Can you please ask your friend for a recipe for water bath canning regular beans. And do a water bath canning video for that please. I have looked and looked and I can’t find a recipe

    I've been doing my wild mushrooms the water bath method for over 50+ years and it also was handed down from my grandmother to my mother and then down to my wife and I. the mushrooms store for years and years without any problems what so ever fresh like you just picked them.     I have used water bath for my green beans for over 50 years and not one jar has gone bad. I pre cook the beans for at least an hour. Then I add them to the water bath which is already boiling. Then I can them for 45 minutes. They seal as soon as I pull them out of the canner. My mother and grandmother canned green beans this way. As I said before, I have not had a single jar go bad.

    Love watching you. Learn so much. Water bath was done well before pressure cookers, maybe you can call ‘rebel’ canning, ‘original’ canning. Lol

    Very interesting! Was an unusually wet spring in my area. Was difficult getting my beans going but I’ve put away a little batch each week and it’s starting to add up 😊

    I am so grateful to have found you. I used to water bath my green beans in all the years raising my children. I've been away from canning for the past 25 years. Now I am retired and have the time to return to canning. I needed to refresh my memory . I only ever followed my mother's method; water bath canning, but she is long passed. Thank you for doing this video. ❤❤❤

    58 years old and was always scared of canning and never knew how to do it ever until last year, Back in the day my mother would can all the time, I can only remember green beans and Tomatoes, she would water bath them. It's sure nice to see people helping others with their skill, many people got away from canning due to convivence. Many people are losing these skills that are ancestors used all the time. Thank You.

    Very helpful ! I water bath can, but I wanted to build my pantry and the tackle pressure canner. My wonderful husband bought me one for Christmas. Today, I am trying it out and doing my first batch of green beans. Wish me luck!

    That's what I did today, but with tomato puree. I usually pressure can it because I can double stack my canner, but not today. So, no babysitting for me today either. Thanks for sharing. Love your videos.

    Wow....bless your heart....that's a lot of work....so happy that you had a beautiful day to enjoy while preparing all of those beautiful beans. I sure hope your family appreciates everything that you do to help keep things going in the household. The amount of work that you do is not for sissies! SO happy I found you. One of the things that has kept me from canning is the pressure processing....I've done water bath for a few things and it wasn't at all difficult. I have two pressure cookers...a large one that was my mother's.... we had a larger family and she used it to make pot roast in...really good...I can do that here... The small one I purchased since my household was smaller and the big one was over-kill. I have subscribed to your channel and am anxious to try some of the things that you have water bathed. Thank you so much for patiently teaching us.

    Our green beans are doing well with heaps of flowers so hopefully heaps of beans.I live in the tropics of Australia so our climate would be very similar to Florida,so different growing season to what you have. Thanks for sharing.
