HOW TO MAKE BANH NAM - FLAT RICE DUMPLINGS

  • Have you ever try banh nam? Growing up these flat dumplings are one of my favorite dish to eat. They are rice dumplings that are filled wtih pork and shrimps. Then wrapped and steamed in banana leaves. It has a soft texture , no wonder it is among the elderly and kids favorite. Here are the ingredients you will need:
    FOR THE BATTER:
    350g rice flour
    75g tapioca flour
    1 tsp salt
    6 cups cold water
    FOR THE PORK AND SHRIMPS FILLING:
    250g shrimps
    350g ground pork
    2 tbsp oil
    1 tsp annatto seeds
    3 tbsp shallot, chopped
    2 tbsp garlic, chopped
    1 tbsp fish sauce
    1/2 tsp black pepper
    1 tsp sugar
    1/2 tsp salt
    3 tbsp green onion, chopped
    FOR DRIED SHRIMP POWDER FILLINGS:
    100g dried shrimps
    1 tbsp oil
    2 tbsp shallot, chopped
    2 tbsp garlic, chopped
    1 tsp salt
    1/2 tsp black pepper
    OTHERS:
    25 banana leaves size : 8X11-INCH RECTANGLES
    25 banana leaves size: 8X5-INCH RECTANGLES

    The dish reminds me of the days in vn before 1975. Simple but yummy. Problem is banana leave is not easy to buy in western world. Thnks for shearing

      In a lot of Mexican markets they also sell a lot of banana leaves if where you are around doesn’t have many Asian markets hope this helps
