    That looks great! I always have the hardest time with wild hog because it was a roll of the dice. Some would cook great others would dry out worse than beef jerky. What I found out is that if you brine it for about 12 to 24 hours, it cooks like any other piece of meat and opens up a whole New World of moisture, flavor and tenderness.

    Brought back some wild boar from Maui in March, from a traditional hunt with Lopaka ,of Lopaka’s Aloha Adventures. Awesome, ethical hunt with dogs/knife. Brought back tenderloins, backstraps and some front/hind quarters and intend to bbq them up this next week! Thank you for the info Sir!

      Joe I strictly used the Harder I wanted to see how it taste. I really liked the way it cooked but I would add some wood for smoke. It burns extremely clean.

      180-190 would be a stage that sliced well and is still moist.

      Wild hog shoulders dont have much fat. That one was not as moist as I wanted, but was not dried out. Brining and injecting are always a good idea for wild game to help with moisture. Thanks for watching and for the comment.
