Franca's Potato Patties - simple, easy and delicious

  • My sister-in-law, Franca, makes the absolute best potato patties and today, I get to share her recipe with you. Simple ingredients, simple and fun to make, and so tasty...you are going to love them - enjoy :)

    Franca’s Potato Patties
    (makes 8 - 10 large patties or 15 - 20 smaller size)
    Ingredients
    • 1 kg potatoes (about 2 lbs.)
    • 1 - 1 ¼ cups of breadcrumbs
    • 1 TSP Paprika
    • 1 TBSP dried Parsley or 2 TBSP chopped, fresh parsley
    • 170 gm (6 OZ) of mozzarella, shredded (half a 340-gm ball)
    • 1 large egg + 1 TBSP water = Egg wash
    • 5 TBSP grated Parmigiano-Reggiano cheese (optional but preferred)
    • Oil for frying (grape seed, sunflower, or plain vegetable oil)
    • Salt to taste
    Process
    • Remove skin from potatoes, wash, cut into quarters. (If possible, soak in water for 30 minutes - this is optional)
    • Place potatoes in a pot, and cover with water. Bring pot to a boil and cook for 10 - 15 minutes, until potatoes are soft enough for a fork to easily penetrate
    • Drain the pot and then mash your potatoes (use a potato ricer if you have one) - set aside. Let cool a bit, then add your mozzarella and parmigiano, mix to combine
    • In a separate bowl, add your egg and water - beat with a fork to mix together.
    • In a different bowl, add your breadcrumbs, paprika and parsley. Mix to combine
    • Now, begin to make your patties by taking some potato and forming a patty - typically, about ½ inch thick. Shape into a round or an oblong shape - large size about 8 inches long or small about 5 inches long, and a few inches wide, as you prefer
    • Dip the patty into your egg wash, then into your seasoned breadcrumbs and coat both sides (you can slightly press the bread crumbs on to the patty if you like). Continue until all patties are done
    • In a frying pan, add enough oil to coat bottom and allow for a shallow fry. Bring oil to 330 - 360-degree F, place patties in oil and fry for 1 - 2 minutes per side, until golden brown.

      yes :) Put in the fridge and then cook when needed....

      Hi Doreen - although I have not air fried them, I'm sure you can do it :) As for Misty Wisty's comment - whoever that is, is on a role....this person gives 1 negative comment per video - not sure why, but that's o.k., I don't mind the negative comments if its makes someone happy :) - anyhow, these come out amazing. Enjoy :)
