    That’s a cracking curry and I keep meaning to try velveting some beef and your tutorial makes it really clear how to do it 👍🏻
    I normally do chicken thighs marinated in a soy & 5 spice based marinade and I use the Mayflower brand curry mix which I can highly recommend and tastes just like a takeaway

      The longer the better for velveting but rinsing is important, your favorite curry paste works well and I do like Mayflower. Thanks for your comments.
