    촉촉하고 부드러운 대만 카스테라를 만들었어요~
    자를 때 느낌과 소리만 들어도 부드러움이 느껴진답니다.
    대만 카스테라는 일반 카스테라보다 수분이 많고 촉촉한 느낌이 더 많이 나서 부드럽게 먹을 수 있는 것 같아요.
    머랭의 상태에 따라 카스테라의 완성도를 결정하기 때문에 너무 뻑뻑하지 않고 부드럽게 뿔이 서는 정도로 휘핑해 골고루 섞어야 잘 구워진답니다.
    얇게 자르니 부서지지 않고 종잇장처럼 휘어지는 게 재미있더라구요~
    언제 먹어도 늘 맛있는 카스테라인 것 같아요.

    ▶틀 사이즈 Mold size : 16.5cm
    ▶재료
    우유 85g
    무염버터 90g
    박력분 90g
    달걀노른자 5개 (약 85g)
    소금 1g
    바닐라익스트랙 3g
    달걀흰자 5개 (약 170g)
    설탕 95g
    ▶레시피
    1. 버터와 유유가 담긴 볼을 뜨거운 물이 든 냄비 위에 올려 중탕으로 녹인다.
    2. 박력분을 체에 쳐서 넣고 잘 섞은 뒤 달걀 노른자를 넣고 섞고 소금과 바닐라익스트랙을 넣고 잘 섞는다.
    3. 달걀흰자에 설탕을 3번에 나누어 넣고 부드러운 뿔이 서는 머랭을 만든다.
    (사용 10분 전에 냉동실에 넣어 두면 더 쫀쫀한 머랭을 만들 수 있어요)
    4. 머랭의 1/3 정도를 달걀 혼합물에 넣고 살살 섞은 뒤 1/3을 더 넣고 조심해서 섞는다.
    5. 나머지 머랭이 든 볼에 달걀 혼합물 반죽을 모두 넣고 머랭이 뭉치지 않도록 하며 조심히 섞는다.
    6. 오븐팬에 테프론 시트나 유산지를 틀보다 높게 넣고 반죽을 부은 뒤 다른 팬 위에 올리고 뜨거운 물을 부어 150도 오븐에서 60분 정도 굽는다.
    7. 완성된 카스테라는 바로 틀에서 꺼내고 테프론 시트를 떼어낸다.

    85g Milk
    90g Unsalted butter
    90g Cake flour
    5 Egg yolks (about 85g)
    1g Salt
    3g Vanilla extract
    5 Egg whites (about 170g)
    95g Sugar

      통밀가루로도 만들 수 있지만 일반 밀가루와는 질감이 달라서 맛과 모양이 다르게 나올 수 있을 것 같아요~

      거꾸로 돌리면 재미있는 장면이 나오더라구요~ㅎㅎㅎㅎ
      저도 나무틀은 사용해보지 않아서 잘 모르겠네요~ 나가사키 카스테라를 구울 때 나무틀을 많이 사용하시는 것 같아요~

    그런데 트리님.. 레시피대로 한것같은데 위가 터지는 이유는 뭘까요?
    또 굽자마자 바로 틀 분리했을 때는 위가 살짝 터진것 말고는 봉긋하니 이뻤는데 곧바로 주저앉으며 가장자리가 쭈굴해지는건 왜일까요? 머랭이 너무 강했을까요?

      머랭이 강해서 일 수도 있고 굽는 온도가 높아서 터질 수도 있을 것 같아요~
      굽고 케이크가 가라앉으면 속까지 완전히 구워지지 않아서 그럴 수 있는데 오븐에 따라 온도와 시간 차이가 있어 케이크의 상태를 보시며 구워주시면 좋답니다~
      굽는 온도를 조금 낮추고 시간을 더 길게 구워보시면 좋을 것 같아요~

    쿠킹트리님 혹시 무슨 오븐을 쓰시는지 여쭈어 보아도 뵐까요? 최근 집에 같이 옵션으로 되어있던 전자레인지 오븐에서 갈아타려고 합니다. 그러다 보니 뭘 사야할지 모르겠어서 이렇게 여쭈어봅니다..(*^-^*)!

      저는 예전부터 집에서 사용하고 있던 lg 디오스 광파오븐 사용하고 있어요~
      저도 다양한 오븐을 사용해 보지 않아서 오븐에 대해서는 잘 모르겠더라구요ㅠㅠ

      대체 할 수 있는 건 없을 것 같아요~ㅠㅠ
      바닐라익스트랙은 생략가능한 재료이지만 넣었을때 풍미와 맛이 더 좋아서 넣고 만드시는 걸 추천해드리고 싶어요~^^

      분말로 된것. 저는 그게 저렴하여 그걸 씁니다.사실 바닐라익스트랙은 너무비싸서요.천연재료랑 화학재료차이지만...

    해먹어봤는데 너무 부드럽고 맛있긴 한데 지름 10cm정도 미니원형팬으로 구우니까 높이가 두배정도 높게 나오는데ㅜㅜ 혹시 작은팬으로 할 경우 시간을 더 적게 구워야할까요? ㅠㅠ

      팬에 따라 반죽양과 굽는 시간을 조절해야 하는 것 같아요~
      틀이 작아 높이가 낮다면 굽는 시간도 줄여주셔야 할 것 같아요~^^

    150도 60 분 중탕 구웠는데
    위에 색이 덜 나온건 오븐에 따라 온도가 달라서 그런걸까요?

      오븐 사양에 따라 굽는 온도와 시간 차이가 나는데 굽는 온도가 낮아서 색이 연하게 구워진 것 같아요~

      카스테라는 머랭에 따라 케이크의 완성품이 결정되고 굽는 시간에 따라 속까지 완전히 익지 않으면 모양이 가라앉기도 하더라구요~
      오븐사양에 따라 굽는 온도와 시간 차이가 있어 케이크의 상태를 보시며 조절해주시면 좋답니다~^^
