It's a tricky one mate coz on both you will have to change some stuff to be comfortable. My brother is 5.10 he put forwards on his street 500 where I was fine on it. But the new x500 I would also change the controls. The seat height is tall tho on the x500. I'd say best bet go in and sit on the x500 and if you can see if someone has the street 500 atleast then you will know for sure.
I started with a Sportster 2002 XL 1200C. I agree they are endlessly customizable. Mine ended up looking like a mini softail. I've since done a 2008 VROD, 2016 Dyna Streetbob , 2019 Streetglide and now a 2024 Lowrider ST. My only issues with any of the older sportsters as learners 883 or otherwise is they are narrow and top heavy. I think a softail slim is an easier bike to ride even though the motor is substantially bigger, None of those work in an Australian Market with the limitations you mentioned. In Canada its the insurance premiums for bikes above 750CC is the issue for new riders.
The sportsters 883 and 1200 Evolution engine was discontinued and replaced by the rev max in the new nightster version. You can still purchase 2nd had evolution models but they can be expensive if in good condition
For 6ft tall rider would you say grab one of these for LAMS or a street 500 with low km?

They only allow 650cc or less as learner approved motorcycles.
Our government is pretty stupid.
