Your videos seems relaxing also you provide so many options in bread making. It indeed emphasises on your effort, passion and dedication in cooking. I am too a mother of 2 and Love to cook. I grew my green onions by just cutting off the bottom of store-bought green onions and planting them in my garden. You can cut the green onions and then they will still grow.
Hi Helly, i tried this recipe but my dough was still too moist for handling after 3 times of stretch and fold plus final proofing (almost 2 hrs in total). May i know what went wrong or what should I do to make it easier to handle. Thks. LP

Hi. I always knead my dough with hands for 15 mins or more to pass the window pane test. Your method looks so easy. Surely will try it. Thanks
醒发时间共两小时(每次醒30分钟),共拉伸了3次,一醒一拉,二醒二拉,三醒三拉,四醒然后分割成12个小团,松弛时候准备葱,包馅,二次发酵至两倍大,刷蛋液撒芝麻,放入提前预热好的烤箱,180度烤25min。这配方前后3小时内能搞定,太赞了!

可能您用的普通面粉蛋白质含量低吸水性差,换成高筋面粉或者用中筋面粉做就减少液体用量。

可以啊,面包烤好放凉后就及时装进密封袋里密封好,第二天还是会很软不会变硬。

昨天我用这个方法烤了土司口感也很好,做面包都可以用这个方法,液体含量越大拉丝效果越好,前提是必须使用蛋白质含量高的面粉,所以最好用高筋面粉做。我还没有尝试过用这个方法做馒头等中式面点,等我实验成功再来分享。
对了,每隔三十分钟折叠并不是一定的,如果室温比较高可以每隔20分钟折叠一次,如果室温低可以延长到45分钟折叠一次。

Maybe your flour absorbs less water so you can try adding less water next time.

Yes, you can but you might need to adjust the amount of liquid you use in this recipe.

谢谢!烤箱必须要预热到烘烤温度,预热时间大概10分钟(烤箱不同预热时间也不同)。我的烤箱不能调上下火,都是放在中层烘烤。
