Nice water recipe 👍. I've had some similar ones with good results. Can't wait for you to try a recipe with 10% or as low as even 7% buffer!
Just a tip: if you lower your buffer you can usually use a higher PPM of your concentrate. So if your water normally measures for example at 60ppm when you lower your buffer to 10% maybe you brew that same coffee at a 100ppm. Will give you a totally different perception of what's possible with the same coffee. But of course only you know what your taste buds like 👍.
