    As an Italian, I can tell you it's actually super easy. I think the scrambled egg problem will just disappear if you add the bacon and eggs to the pasta pot (after draining the water), instead of adding the pasta and eggs to the bacon. That way the eggs don't immediately touch the bottom and they don't cook so fast that they turn into scrambled eggs. And (at least for me) mixing in the pot instead of the pan makes it easier to avoid spilling everywhere.

      Valeria Ferrari I think the secret is that you only need to use the yolk for making carbonara, discarding the whites. I’ve always seen it done with egg yolks added at the end of the whole cooking process ☺️

      Can you explain what you mean by it doesn’t touch the bottom? Because in the video she had a cooled down saucepan with the bacon in it.

    We prefer olive oil to butter and onion to garlic, but apart from that this is a good carbonara recipe 🙂

    My top tip for carbonara: "temper" your egg mixture with a ladle of the pasta water before throwing it in the pan! Foolproof. And this is after I too created a few 'scrambled eggs and pasta' dishes because, even though I'd taken my pan off the heat, it was still too hot.

    I also heard you can add a little of the hot pasta water to your egg mixture first. So you temper it a little before you pour over the pasta.

    Ah I always wanted to try this recipe but its tricky, most of the time... yes it turns to scramble eggs😂 so I always ended use cooking cream. Thanks Dzung for sharing this! 💜

      the egg mixture is added off the heat if you leave the pan on the flame they will scramble.

    I had a co-worker whose family is from Spain and she showed me how to make a carbonara-like recipe years ago...but without eggs. I haven't made it in a while, but I think instead of eggs, she had me use parsley. I gave that recipe to my nephew this last Christmas since I'm trying to teach him how to cook. But now that you've shown us an easy way to do carbonara, I'm going to point him to your video. Thanks for sharing! But I think the carbonara could use a touch of color...maybe toss some parsley on there (mixing your recipe with my friend's). LOL

      2 cloves garlic, minced
      1-2 tbsp of olive oil

      Salt
      Freshly ground pepper
      1/8-1/4 tsp nutmeg
      1 lb freshly cooked pasta

    Omg!! Came across your vid this morning (notification squad!), excitedly realized I had all the ingredients on hand, and made this for lunch!!!     She almost got it right, no garlic, no bacon but guanciale. to avoid the eggs from scrambling you add the eggs and parmigiano cheese mix off the heat, 1 tip, use 1 egg yolk per person plus 1 whole egg. Carbonara is a Roman dish, I live in Rome. 😉 but in the end she got it better then many Americans.

    I made it tonight for dinner! My first try at carbonara didn’t turn out too bad. I used peppered bacon and it was a peppery deliciousness. I love the simple ingredients, we usually have all of those things on hand.

    Love the fact that you don't ruin the recipe with cream - I just don't understand why anyone would do that. Instead of whole eggs, I only use yolks - and no garlic. Very basic but it tastes like heaven 😉

    Tried this but change bacon with carrot & mushroom
    I’m affraid of making omelete , so I mix the egg with cold broth. Just a little bit. Turn off the pan while mixing it. It worked

    Carbonara is such an easy recipe and I really don’t get why in USA everybody ruins it. No butter or garlic needed! I can deal with bacon instead of guanciale and parmigiano instead of pecorino but why adding the other ingredients?

      Sure it’s personal taste, but I was born and raised in Rome and for me this is so traditional that I’d rather stick with the OG recipe, mostly because is easier 😊 and yummier (quality ingredients are the key)
