This is a great recipe! I have it memorized and make it once a week or so. It’s quick, easy and produces a hearty dish full of wonderful flavours! The only alteration I make is that I cut the chicken thighs and chorizo into bite size pieces; this spreads out the meat nicely. And to think, before I tried this recipe I had never even heard of Arborio rice or Chorizo sausage!! I found One Pot Chef after doing a search for “How to cook rice.” Now I’m cooking all sorts of quick, easy meals. Thanks, One Pot Chef. Your recipes and presentation style are great! Keep it up!
Try this recipe today and I substituted the chicken with shrimp and chorizo with Spanish chorizo, I also added garlic, yellow and orange bell pepper. I love the recipe and I love your channel, I tip my hat to you sir and lots of love from Uruguay.
David your quite a good salesman, I just don't like Risotto. But after watching you put together this Chorizo and Chicken recipe I'm sold. Every time I think of Risotto I know it's going to be a mushy dish. But the final shots of your video have got me thinking that I need to rethink what I've been thinking. That final shot got me hungry, nice job.
I used to feel the same way about risotto. I was converted by a friend a few years ago when she showed me a short cut version that was beyond delicious :)
Made this just with tomata passata, risotto rice, chicken stock and chorizo with a handful of peas and it's delicious. Without the wine, peppers and herbs its still amazing and only about £1 per filling portion. Will definitely make again
made this tonight for dinner after work - 10 minutes and it was simmering on the stove and i was kicking back on the couch watching TV and having a glad of wine! half an hour later dinner was served and it was AMAZING! thanks OPC x
I'm sure this would taste incredible, but I added too much oregano and my risotto became bitter. Nothing I did could save it 😔 we ended up picking out all the meat and eating that instead lol

For some reason I aways smile when you put a "t" in chori-zo. I am definitely going to try this. It has enough meat/veges mixed in with the rice to make it diabetic friendly. Thank you!

I wonder how to cook risotto which has red-ish colour? over 10 years ago in my place, Pizza hut restaurant provided risotto in their menu and its colour had more red on it than this one. I used to like it and I want to try to cook it today...

Hazumi Hanami in that case, normal long grain rice will do.but in order to get that starchy, creamy consistency, wash the rice thoroughly only once or twice at the most, and make sure you have thick, flavorful stock.
This is very similar as a Chinese dish called ”congee”, the only difference is congee add more more water and the rice type is difference also. But Both r yummy ;-P
How do you think this would taste using Bratwurst? I do cooking demos at a Farmers Market every Saturday and I have Brats from one of the vendors to feature. This looks really nice. What do you think?

Hi Chef, you can keep on disliking risotto because this dish is not a risotto recipe. It is more of a paella or jambalaya recipe.
