I never thought anyone would measure the onion and besan. 😂😂
Well, for people who've not made this before or often, it's called a recipe. 🙄 I'm sure there are a lot of dishes around the world that you wouldn't know how to make without one, and people would laugh at YOU.
Dont be so defensive. Most Indian food does not have fixed recipes like the west. Every region has its own cuisine. Within every region each community has its own cuisine - eg vegetarian and non vegetarian versions of the same dish. And then to top it off each family has its own version. We do have ratio based recipes ie 1 part of A to 1.5 parts of B and so on. But we do not measure ingredients as minutely as you do in the west. Cooking is an art and a science. While the west likes a more "scientific " approach in India cooking is an art - you are allowed to be creative as you want. So ingredients are not measured instead we follow rule of thumb. In fact a good cook is someone who has the ability to create fantastic food with whats available rather than specifically bought for a particular dish.@@leapintothewild
@@leapintothewild I would not measure because the moisture content varies a lot. It would have been better if they spent more time explaining what texture to go for.
@@vikramkrishnan6414exactly we have to use lesser water in during rainy days and more water during dry summers, as water evaporates faster. we go for the batter texture as our goal instead of measuring everything.
with some ingredients like lauki we don't need to add water at all because they release a lot of water from within just enough to make that desirable batter consistency.

Literally "Gora Pakora"🤣🤣🤣
😂😂😂
😂😂😂
😂😂😂
🤣🤣🤣
👍👍
Never seen pakoras being made with such precision & care, as an Indian it’s always been hands, mix mix dash of this pinch of that mix mix fry fry 😂😂
I love that he did that though. As an Indian we just have to watch our Ayas and Ammas and copy, copy, copy. 😂 🇿🇦
In a sense there was precision & care but with respect to cumin & coriander powder & carrot chutney it was total fail of phenomenal proportions!
Why the south African flag?💀@@eve6225
In ko ghanta malum
They give a royal honor to pokoda😁
Hot Tip: to make these even crispier add some rice flour about to 2 teaspoon to the besan
And a pinch of baking soda
I second that
Sprinkle some posta (poppy seeds) makes more interesting. Try it
And to top it ...a tiny pinch of cocaine....
Some people add eno too
Yes we did it!! Goras are now frying bhajiyas
Once I heard a Gora asking for idly batter in an Indian store. That day I was so proud 😂❤
Lol, it's just food. Anyone can eat it.
Goras love pakoras
@@gabbar51ngh there was a time when they made fun of Indian food, dressing, culture and what not. This is Representations we Indians need
it was actually american dish which was copied by indian so
I have everything in my pantry - I'm making these now, SO YUMMY!!! Indian food is divine ❤ Thank you ATK.
Thank you bless you
Add 2 teaspoons of rice flour and it will make it crisper
@@Alphamemer911Or suji i.e. semolina.
Use sweet chatney and green chatney
@@SonuDh-bj8gw or any sauce. I always used to eat them with Tomato sauce. But these days I like them with mayonnaise as well( hot & slightly liquidy mayo )
In india we use our hand to frop the batter higgledy piggledly. We also use a little rice flour to the batter for crispness. Then you can avoid the baking powder. When monsoon comes we make pakodas.
पकौड़े में बैकिंग powder nhi thora ek चुटकी मीठा soda aur pani कम if you want that crispiness ..
@@manoramamannu235meetha soda is literally the same thing as baking powder.
We have a rough idea of the amount by watching our parents making it and then our own practice.. Someone new wouldn't know and they need proper instructions.
Being an Indian I am happy to see Pokhara’s at America’s Test Kitchen 😊
pakoda hota hai laudu😂
It's Pakora, Pokhara is a City in Nepal, jeez 😅
@@ShivaChettriwhat else you expect from some random bot? I mean look at this comment lol. Nobody in India cares about American test or any kitchen for that matter! we will eat our pakoras regardless 😂
“Being an Indian” har baat pe validation lena zaruri he?
So lol..u need their approval? Lol
Tea + pakore + rain =☮️
Peaceful environment
The world needs more Pakoras. Needs more curry too, but one step at a time. Pakoras are so good, I have to limit myself as I won't have room for the curry dishes.
Tip: u can put the pakoras in curry!! N it's actually called curry in India too! The gravy is made by mixing Gram flour (besan in India) n sour yogurt add water accordingly with spices n done! Oh add pakoras too
Try pakoda with bun n green chatny and taste it will be out of this world
Don't eat too many, besan flour causes bloating wn consumed in excess😊
@@mansimehra7565 True but its a tough recipe, takes a lot of time to cook. But honestly worth the effort.
@@takumiusui6667 but its easy like....nothing to do... 🤌 Water besan n yogurt...spices pakora. Done. Hardly takes 10 15 min
Wow Pakora reached america 😮 proud of my indian cuisines ❤️🇮🇳

Tbh, ethnically we r the same, religiously we r poles apart.
Its taste doubles in tea and that too on rainy days.😂
Yes! On a cold Christmas day
@@KomalD-cb2buwill go well as well 😋
Don’t tell all the secrets 😂
First Parathas now pakoras! So glad to see ATK showing how Indian food is made, and pronounced! 😊
😂😂😂 adding s doesn't make it plural u are using English rules in hindi😂😂😂
Instead of baking powder we add a table spoonful of hot oil. It helps to make the fritters crispy.
Yes, you are right. We also do the same. Never heard of anybody adding baking powder to pakoras.
😢
Some do @@blacklabela

Pakoras are good to snack on 😊 followed by a cup of masala chai or a ginger chai
In India, pakoras are a favorite during the monsoon season 😊 dunno why but you have to experience the heavenly aroma and ambience of rain while you cocoon yourself in the coziness of your room
Tip for Chef , once you have your hand in the veggie mixture you don’t wash up you mix the batter manually and it will be perfect consistency without adding any water at all . Then you can wash up and fry by spooning the batter as you did , the best way however is to grab the batter manually and add I to the hot oil. The process is just faster.
Yes we can also pick the batter in your hands
They won’t be able to do it as they aren’t use to it.
Waah!👌 Anubhavi Bhartiya Naari😊👍
A cup of masala tea or Mysore gold coffee would be a great compliment to these crispy goodness😊yum yum
Indian food is huuuge library of dishes
I definitely have all those ingredients in my pantry (except those seeds), because I love Indian cuisine and make it often.
The seeds are not necessary.. we used to use just salt & chilli powder & chickpea flour. Basic pakoras. But still delicious!
@@globalcitizenn Yes, I know how to wing it and revise or do without some ingredient(s). That never stops me from cooking.
You can completely omit those seeds. My kids aren’t fond of lots of spices so my pakoras are just turmeric, paprika, salt, besan, vegetables and a pinch of baking soda
in India these seeds are not anyways used other than cumin powder and Ajwain seeds for digestion
@@EvolveYourBrain you can add rice flour in place of baking soda. Believe me it will make it more crispier.
Note to self: Don't watch ATK while hungry 😩
LOL 😂
I love their passion, even measuring the onion and besan
Love this recipe! I’m from southern Pakistan. We often add ground pomegranate seeds to our pakoras for a tangy zing
We add 'aam choor' (dry mango powder) in India. Pakoras are incomplete without tangy zing.
This man makes making pakoras look like such an art. As an Indian I can sure say that looks both authentic and delicious! ❤
i like to add some rice flour to make them very crsipy
A tip to my western friends - Pakodas are enjoyed most with milk tea (indian style) in a rainy day. And you will have glimpse of heaven
The biggest difference between Western cooking and Indian cooking is precisely measuring vs eyeballing. There is no precise measuring in the Indian kitchen - every time you get a different flavor and that adds to the diversity that we so love. Diversity also leads to new ideas that can evolve into better tasting recipes.
These pakodas look great though. When it rains, all you need are some pakodas, masala chai and good company to sit alongside on the balcony while you watch the rain drops and munch on. Also some coriander chutney to dip the pakodas in really elevates the experience.
Mix it with hand, size, ball and drop it in oil with hand and eat with hand is the way it goes in Indian homes.
Eggplants butternut squash cauliflower cabbage, you name a veggie and you can just add them! Tastes as good as anything. 20 minutes and you can feed 15 uninvited guests and make them happy 😅
My mom adds a few spoons of rice flour or corn flour
They look delicious! ❤
We indians go more by feel and eye to measure the ingredients ..mix by hand and also drop the batter by hand into the oil...it is much faster...
There is something magical about pakoras, they taste different and better on a rainy day.
I am making Pakoras since I started cooking, especially in Ramadan for iftar( fast breaking time). Very popular snack in Pakistan. This recipe is spot on and very precise .😋 Good job America test kitchen.
It's an Indian snack madam...not Pakistani..!
@@vishnukapoor7436 same thing. It was literally one country before partition.
@@thugmonk9837Nope! Not the same there was no pakistan it was all India. This is how cultural/identity theft happens. Like now how they are saying Yoga is not from India or how they diluted it to only physical nature.

Last year i went vegetarian due to health reason, indian food made my life so much easier, especially and indian dish called pakal paneer( basically a spinach paste with spices) and this pakora can go along with anything, its a side dish, snack or even main dsh.
Palak paneer.
Ohh lovely pokoras , thanks for this recipe I love Indian cuisine. ❤
Very nice to hear from American chef nice
Hey that chef is not less than scientist. so precise ❤
You need to add only a teaspoon or two of water because the veggies have enough moisture
have pakoras with tea and green chutney .. literally yummiest.
So Glad ATK is acknowledging their Indian audience !
You can also add 2 tsp of rice flour to make it even more crispy
Get an Indian to share the inside tips.
Use rice flour instead of baking soda to make it crispy and can also add cabbage instead of potato.
Pakoras goes well with Mint and corriander chutney and a piping hot cup of Chai. Best time to have Pakoras is when it's raining.
Notice they are stealing the cuisines of the world, and slowly they will call "Pakoras was invented in America's Test Kitchen" ... They is what they did with many dishes including Butter Chicken, Chicken Tikka masala etc.
Looks great 👍🏻
I will try it out
He did excellent job
I just love pakoras, … so delicious and easy to make 😋🍺
Good job Keith 👍
Yes, pakoras go well with a beer 🍺 cheers
Love pakoras
in india atleast in north , pakoras are made up of one vegetable at a time like : potato pakora , chilli/mirchi pakora , onion pakora , spinach pakora but yeah you could make them by initially forming a salad and then multi veggie pakoras
Having them with masala chai in rainy season.... literally can take u to heaven ❤
Chef...important tip from an Indian living in Delhi - I make these almost every alternate days.....you have added a little more water in the veggies after mixing it with gramflour...
Perfect and healthy recipe .
Perfect pakoray. He didn’t skip any ingredient ❤❤❤❤😊
Food connects people. Well done! Very well explained and neatly done. Ignore some people’s making fun. This Indian gives a big 👍
This recipe will clear out my vegetable drawer, for sure. My girlfriend will think I've gone vegan.
This chef looks just as yummy as the food ❤
Generally you dont need to add additional water to the batter as you initially massage the vegetables enough moisture is released to wet the baisan or basen to make the batter but if you still think its too dry a few drops of water can be added. Dont just add all the water at once just add what is needed.
If you don't add water they won't stick together they will be seperated when heating
Good job chef!
Omg 😱 my favourite... Tea time snacks 🤤 our Indian snacks
Extremely amazing, yummy yummy yummy ❤❤❤❤
One more tip...first fry them for one minute or more on low flame until pakoras get light brown...then bring out in trey...fry second and third batch same....after that....high your gas flame and fry again all until they look dark brown.....it will give best crispy ness and or important when you bring them out in high flame...the less oil remains in pakoras so they not seem too oily.....one thing you should remeber be careful your pakoras not have burn in high flame you can adjust flame in such condition.... professional knows this trick to make things cryspy...
And I loved the way you Prepared
I liked the fact that he used the right amount of besan to hold the onion together. Nicely done
👌👌👌😃, Am from India, never thought of such precision for a routine stuff. Loved it
Beautiful representation ❤
Surely My India is the Heaven and Capital of the World In terms of Foods especially For Vegetarian and Street foods. No Match in the world and no comparison. ❤❤
On a rainy day
Nothing can beat the pakoras & tea (chai)
Good to see Pakodas becoming an international delicacy.

Never seen such precise Pakora making. We just mix and fry 😂

Rainy season this cousine very tasty 😊 with cup of mashala ☕
adding baking soda makes it fluffier and crunchier
Chef Doing his work very well❤❤❤❤❤🎉
Popular Indian snack 😋😋 ❤❤❤..Love from India. Here at India we eat during rainy season most of them time ..
Common like "Pyaaz k pakode ho jaaye"
Wow, that looks amazing yummy yummy ❤️😋😋👍🏼👍🏼
In the cool rainy monsoon season, these onion pakoras test is more & more awesome, though this onion pakora recipe can be done in any weather with equally testy.
Some people are saying "so many ingredients are hard to find 😢" but these are even easy to find here in Denver and we don't have a huge Indian community 🤷♂️ and there're also easy-to-find online sources for fenugreek or whatever
Skip the spices, limit it to the veggies and salt with the chickpea flour. Almost as good.
Very good recipe❤
I have never seen any Indian women making pakora measuring besan n onion...n yet all women makes it best... Indian women are pro in making most delicious food without measuring a thing...
Wow happy to see Bhajiya/pakora on American channel ❤❤❤❤
Everyone has their own way of cooking... ❤
Just found out your channel....great work folks... pokoras looks crispy and yummy 🤤
Loved it!
No need to add water. Add a tablespoon or so of hot oil instead for mixing. Will give a really crisp texture.
Pakoras got elevated to a whole another level!!
2:19 it has a Thyme like flavour because it is Thyme seed
This is an Indian dish that is cooked in every household. Indian veg pakodas
Put a little more water in your pakoda and gram flour was less, the taste of gram flour remained less in it.
Everything else was fine
Cauliflower is popular in the uk
Pakora with tomato chatni great combination
Please add more proportion of Besan batter to have a better taste ❤
Thankyou for keeping the recipe as authentic as possible 🙏 pushpek bhaiya will be so proud
Pakoras could be made with literally anything. Any vegetable. And they are good.
Was a lovely video! Love from India 🤗💜
P.S. add a little rice flour for crunch
Pakoras with chai over adda with friends and family members when its slightly cold or raining - is honestly a core memory
Btw you can just use any curry powder or spice combo you'll probably be fine
