I learned the way turkish women prevent okra from getting mushy. You never cut it, and take care to clean the section around the stem without hurting the skin!
I’d also suggest a Moroccan appetizer made by fried Okra mixed with steamed tomatoes & chopped eggplants and sautéd together plus spices (coriander powder and etc)

Takes a while to get there, but any slime that starts at the onset of cooking is quickly turned into flavor, (And dries up). I've been cooking okra this way, (and in gumbo), for over 30 years.
Well I had high hopes but I covered for 12. Uncovered and cooked for 12…then cooked for 8…then cooked for 4….then cooked for 4 more….then a few were crispyish….then cooked 6 more and most are a little crispy. Oven temp was accurate with a manual thermometer. So needs some tweaking for sure

Evoo is expensive for good oil and it breaks down in higher temperatures. It also has a stronger flavor. I personally would use avocado oil because it’s a neutral flavor but has a higher slope point.
You take green banana and roast in same way. Either keep thin or thick as per as choice. Use same method for taro. You half boil taro adding ordinary vinegar. All skin will come out without itching your hand. After removing skin bake it. Add lemon 🍋 or vinegar. Jay bharat.
I have. It works pretty good if you get the okra as dry as you can (pat it with paper towels, remove the ice crystals, etc) and then give it a few minutes in a hot oven to dry it a bit more before you prepare it.
I have lived all over the world (Italy, Greece, Turkey, Brazil, Canada) and all over US (FL, COLORADO, MINNESOTA, NJ, NE and NY from NYC to Western NY to Capitol region and up near Montreal. Have had okra in many forms and types of stews. Never roasted until moved tonGeorgia and then not until going to farmers market where they roast whole okra over open wood fire in a screen bin that rolls them around over the fire in batches. IT IS THE BEST. Can never get enough. Note - when handling fresh okra it has a fine hair on it that some people can be allergic to. Gives you awful itching rash. May need to use surgical gloves. TRY ROASTED OKRA IT IS THE BEST.
Have you ever sated chopped Kara ~ 1 cm slices with thick slices of yellow onions after getting rid of slime and adding some salt, black and red pepper and say half a lemon juice. Absolutely delicious!

We dice ours small and toss in oil, salt and cornmeal then roast.
You can also dust some gram or corn flour, pepper and seasonings you Ike to the cut okras and deep fry golden brown.

I LOVE okra. I’m jealous that you can grow it. I have tried growing it but it just doesn’t do well. I don’t think it gets hot enough for it.
I love Okra. But l think my favorite way is to brown it in a cast iron skillet with bacon Drippings.

Shopping for fresh okra is unpredictable. What you want is tender, small pods, not the overgrown woody ones .
It’s not difficult to grow and yields constantly for many weeks. The only thing you need is a sunny spot.
groww your own, its the most forgiving crop and gives fruit every day or two. good to freeze or dehydrate for winter too.

Best way to have okra is breaded in cornmeal, and slow pan fried until very slightly charred around the edges
If okra is too large, they become tough, stringy, and tastless. I love the slippery slime in okra, especially in greens.
What a diplomatic word, slippery. This is a great idea. I do the same thing with the giant zucchini that others are sure they don't like. Try it.
I learned this trick in Greece during the 50’s, main difference is the okra is left whole, tossed in olive oil with salt
