    Mix the cream cheese and butter together until smooth. Next, mix in one egg at a time. It mixes a lot easier than shown in the video.

    If you have an electric coffee grinder, you can use that to pulverize your granulated sweeteners into a confectioner's / powdered consistency. You actually save money this way as well, because packages of these sweeteners are typically sold by volume, not by weight. The granulated versions have more mass per bag than the powdered versions despite being the same sized bag, and thus will make more powdered sweetener per ounce. You also don't need to keep to different bags of sweetener around.

    Made this today 6/23/19. Used a mini-bundt cake pan instead of 1 large baking pan; the recipe made 4 mini-bundt cakes. The cakes came out perfect and beautiful. Used Swerve Confectioners Sugar Substitute in the frosting; made it very light and airy. My wife loved it and my grandson, the pickiest of picky-eaters, loved it too. This is the best Keto dessert we’ve found since beginning Keto in October 2018. Thanks Nicole.

      Did you use same cooking time? Thinking of using 2 mini bread loaf tins, but wasn't certain about time. I'm great at burning baked goods so being extra cautious. lol

      I did use the same baking time. I kept an eye on it as ovens are often slightly different but making a second batch confirmed the process.

      I meant to mention that I like the smaller cakes as they seem to rise better. Let me know how using two pans works please.

    I made it last night. I followed your recipe. I didn’t have lemon extract so I used freshly squeezed lemon juice instead (and confection erythritol in the icing). I left it overnight and I am blown away how FANTASTIC this lemon pound cake tastes like. Amaaaazing!!!

      @@VanessaCed Hi! I used 2 teaspoons - same amount as she recommended for extract. You can definitely taste the lemon, which balances out perfectly with the sweetness. It was good!

    Nicole! I made this yesterday for a friend's ugly Christmas sweater party and people could not believe it was Keto. There was so many non-keto goodies, but this lemon pound cake was devoured leaving a cannoli cake untouched. YEP...THIS Keto Lemon Pound cake kicked cannoli cake to the curb! I know I will be repeating this easy and delicious recipe for many years to come. Thank you!!

    I made this. It came out soo good. The only difference is that I use a round cake pan and I used vanilla extract instead of lemon. Take delicious and very soft. 😊👍

    Thanks for a great recipe. Made this about 3 weeks ago, then today, I switched it up to banana extract and added 1/4 cup of chopped pecans and banana in icing. It’s cooling now. 💕

      Yup! So good! I made two cakes. One to keep and one to share. It was my sister in laws birthday yesterday. She was just diagnosed with diabetes. This was a perfect example of how you don't have to give up cake and goodies just because its keto. My in laws were impressed with the cake and everyone thought it was delicious!

    Just made this tonight. I'm absolutely amazed by the taste and texture. I had previously failed to make 2 other lemon pound cakes using 2 different recipes and they came out totally inedible. This recipe is a favourite of mine now and I cannot wait to see what other recipes you come up with. Keep up the good work!!

    If you don’t have powdered stevia or even powdered sugar, you can always put granulated sugar/stevia in a blender until it gets a powdered consistency!!

    Made this last night and it is AHHHH-MAZING!! Nothing about it says keto or low carb. The taste and texture of this cake is just absolutely PERFECT - moist, fluffy and NOT greasy or dry like some other keto cake recipies I've tried..     After watching this video since it originally came out, I FINALLY got back into a lower carb diet. I decided to subscribe due to this video. I made this 2 days ago. Babbbbyyyy, this recipe is A1!!!! You must make the frosting for it to really taste like true iced lemon cake. I discovered I had no soften button 😒, but it was well worth the extra work. It'll also make the icing come out like a whipped can of store bought frosting! The cake is versatile, so I plan to play with the extracts and fruit to the cake base and see what else works. Thanks so much, Nicole. If I want to make this diet lifelong, I need more options of recipes, so I can stick with it. Blessings to you, your family, and your channel 🤗!

    Is it bad to eat this lemon pound cake everyday? It's like super guilty pleasure.....It's like there's a huge pool of water near my feet, oh wait it's my mouth drooling.     You can make your own powdered sugar. All you need is to put the granulated sugar in the food processor and blend. Works great and saves money. Please let me know if you try.

    I’ve been doing this exact same recipe for many years and hundreds of times. And i use much more erythritol/stevia mix; more like 1/2 cup minimum.

    I'm Greek so I just love anything with lemons!!! I mean I squeeze lemon juice on my meat too! Yeah, my husband thinks I am sick, he sometimes freaks at my taste in foods, especially when I eat tablespoons of ghee as I make my coffee in the morning 🤣🤣🤣🤣 but hey after 20 years of marriage he now loves lemons and we have 5 lemon trees, 3 lime trees, 7 mandarin trees...... oh and an olive tree. Go figure, and it's like in my Big Fat Greek Wedding when the mum says the man is the head of the family and the woman is the neck, she can turn that neck to her liking...I don't ever remind him it was my idea from the beginning, I just let him think it was his and it's a win-win, you get your lemon trees !!! And he thinks it was HIS idea to plant a citrus garden 😂😍✌🏻👍

    made it without the icing. Cooled then cut into 12 slices, buttered each slice on both sides then pan fried. Drizzled ChocZeros maple syrup over it...OMG

      Sounds like good french toast. I spread my french toast with a little peanut butter before pouring syrup over; However, that would be better on a vanilla cake.

    In the future, put toothpicks in the top of the cake before you cover it and that keeps the saran wrap or foil from touching the frosting. :) looks yummy!

    TIP: use your nutribullet to pulverize granulated Erythritol into powdered Erythritol! Works great for me! Especially since I have a hard time finding powdered.

    easy way to make powdered sweetener.. run it through a spice grinder or small blender like a Nutribullet. Presto! Powdered sweetener :)

    Made this with erythritol instead of stevia, added lemon zest to both the cake batter and the frosting, and added a half of a twist of the Himalayan Pink Salt. Can't wait to try this tomorrow!

    add the zest to barter... i do. its great... also .believe it or not. the taste gets better in a few days. I have a piece of this every morning Monday through Friday before work. it's great.with coffee.....also use some oil .about a teaspoon or two. helps from getting stale to soon...

    Excellent recipe however if you use the actual lemon juice and skin grinds plus you separate the egg whites, beat them separately and incorporate them gently in at the end of the cake making process this will take the cake to the “Devine” level.

    I made this yesterday and it did come out pretty good. My non keto friends enjoyed it too. Next time I would increase the sweetener to the cake for our family. Thank you for the recipe.

    Got this chillling on fridge now. Kept having to smack little fingers away from the cake. No worries though they both got to lick the beaters.
    I'm crossing fingers outs a hit because I'm wanting to send this in school lunches.
    I was really surprised how thick the frosting layer was. I might have to try lemon cup cakes.

    This pound cake is amazing!!! I can't believe how moist it is. But next time I will use more sugar 3 tablespoons was not enough seeing I used Swerve granules. I would say next time I will use 1/4 cup or more. You couldn't even tell I had sugar in the cake but it was great as far as the moistness and not tasting eggy or like cornbread!!!!

      That is because the sweetener she uses is a 1 to 2 cup sugar replacement and Swerve is 1 to 1.

      Hi, I’m about to start this recipe in about an hour.... just wondering - did YOU make it?
      I’m concerned because I don’t have the smaller loaf pans....
      I just left her a message about it but not sure if she’ll see it or respond in time.
      I’m considering doubling the recipe so it fills MY loaf pan better.
