This sounds delicious! I find a 2 to 1 ratio of water to quinoa makes cooked quinoa too soggy, especially when adding a dressing. I tend to use 1.5 parts water to 1 part quinoa, and it produces a texturally more pleasing result, at least for my personal preference.
Also as far as feta goes, I always look for the kind made with goat and/or sheep milk. A lot of American brands are made with cows milk, which has no flavor, as far as I'm concerned. Most of the pre-crumbled feta I've seen is made with cows milk. You can tell because it won't specify the kind of milk.
Why do you call seedless cucumbers “English” cucumbers when I live in England and have never seen these before (the only cucumbers I have ever got have seeds)?
Because in America, our cucumbers are very different than yours… Your cucumbers are very much like the sweeter more seedless, thin skinned ones…. Our traditional cucumbers are shorter, very thick skinned…. Full of seeds and slightly bitter at times… English cucumbers also go by lots of different names here “seedless cucumbers”….. hothouse cucumbers” “European cucumber” “burpless cucumber”…. I think I named them all…😅 I most often see them advertised as “English” or “Hothouse”…. They also come wrapped tightly in plastic here as they spoil super fast!! They’re my favorite cucumber ❤❤

Does quinoa belong to Greek traditional nutrition culture ???sure no because Greeks use more healthy ingredients like bulgur and barley and other Mediterranean pulses and legumes..quinoa is not only not healthy .. it's bad for health and was consumed in Bolivia just because its available Bolivian themselves say quinoa is not a super food.

Honestly, you can just skip the cheese, and it would be great! But if you really want to add cheese - goat cheese would also be delicious.
