      I liked the good humor during the mess-ups. Oops, too big of a strainer... oops, didn't trim the onion end. We don't have to be perfect, just fix it and keep going!

    Delicious! I looked for a Greek quinoa recipe after ordering it from the deli several times! This taste almost exactly to the one I’ve been buying pre-made.
    I’ve made this 4 times now! The last three times I’ve doubled the dressing and find I like it better but that’s just a preference! Thank-you for a superb recipe!

    Amazing recipe! Superfood meal full in nutrients and vitamins! As a Greek ( we love herbs) I add some parsley or mint which skyrockets it.
    Chef, you are real and authentic, something we need so much in todays perfect yet fake world. Keep up the good work with the “mistakes” and don’t mind the negative comments. “It’s only those who do nothing that make no mistakes” has Joseph Conrad said.

    Hi Justin I'm going grocery shopping later today. Buying all I need to make
    Greek Quinoa salad
    Vegetarian stuffed bell pepper
    Mushroom rice with veggie broth
    Vegetarian enchiladas
    Cauliflower tacos and your avocado dressing. That way I have food for a couple of days. He's so excited. Plus you know I'm cooking food for my husband my 2 daughters and son in law. I'll be cooking a lot. But my sons the only Vegetarian. I'll text you after I have cooked all.

    I use a “Grapefruit Spoon” to remove the seeds from my cucumbers, it works like a charm!

    Trader Joe's has sliced Kalamata olives and Feta with Mediterranean herbs. I added some finely chopped bell pepper and zuchinni to the recipe...delish!!

    I did not have any red wine vinegar at hand, so I had to use balsamic but it was delicious. Thank you for the recipe.

    Quinoa is much better if you cook it in a broth like chicken or vegetable broth. I hate flavorless grains.

      You can use rice vinegar, balsamic vinegar or apple cider vinegar. By the way, when they make red wine vinegar, the alcohol is converted into acetic acid which gives it its acidic taste, so you don't have to worry about it being alcoholic if that is your concern.

      I don’t know the reason behind why he does it but I personally remove the seeds because I feel like they have a raw egg taste. Which my family and I strongly dislike! It’s even worse when they sit out too long.

      Yes you can soak too. Try to soak it twice if possible. But once is fine too

    Why did you take the seeds out of the cucumber?
    You can also add green pepper, avocado and instead of feta you can use cottage cheese. I eat quinoa this way at least once a week.

    God put the seeds in the cucumber b/c he wanted them there. He knew that whatever makes up cuke seeds are things our bodies need. Other than that irritating act, I liked the video.

      Following your cucumber seed theory to its logical conclusion: God put the seeds (pits) in olives because he wanted them there. He knew that whatever makes up olive seeds are things our bodies need. Unfortunately, he forgot to give us titanium teeth with which to chew up the olive seeds, so it appears that the god you are relying on to force everyone to eat cucumber seeds (even if they give them indigestion) is not infallible and therefore not really God.
      Alternative belief: God put seeds in cucumbers ( and olives and avocados and even people) as a means for them to reproduce themselves. Taking out those cucumber seeds was cucumber abortion. Other than that ungodly act ( for which Coit will end up in hell), this looks like a very tasty recipe.

      @@dianaf2077 Come on now. Cucumber seeds are delicate enough to eat without a problem. He wanted them for our bodies. And actually, watermelon seeds are loaded with nutrition. Noone may want to eat them because they have other things they can eat. But think about long ago, when food was hard for people to come by. Those seeds would have been a nutritional resource for our bodies that we as starving cave people or just earlier people would have been grateful to have. And if some kind of catastrophe happened, we would be grateful for them again. Seeds of all kinds are loaded with nutrition.

      If you leave the cuke innards your salad dressing might taste a bit watery. Eating them after removal will ensure no waste and you still get to consume them. Your salad will still be nutritious.
