  • It’s one of the oldest debates. Is Chicago deep dish really a pizza? Some call it a casserole, other’s an abomination. Jon Stewart once attacked the pizza on national television claiming, "This is tomato soup in a bread bowl. This is an above ground marinara swimming pool for rats." So on this episode of Really Dough? Scott and Mark are tackling the great debate with a classic Chicago deep dish pie from Emmett’s in Manhattan. Will Mark call it a pizza? Will Mark kick Scott out?
    Pizza is one of the most customizable foods in history. Tomato sauce, white sauce, artichoke cream sauce, broccoli, M&M’s, pineapple, edible 24K gold -- a pizza can be anything your heart desires. But should it? Renowned pizza nerd Scott Wiener is challenging the idea that pizza can be anything. He’s traveling all over America, spotlighting these Frankenstein pizzas and trying to make a case for whether these new customizations can, in fact, still be considered a pizza. In the end, Wiener takes these pizzas to Lucali to pass final judgment from the purist of all pizza purists, Mark Iacono, where he will either declare each slice “PIZZA!” or ask with complete disgust, “Really, dough???”

      @@Ash_Wen-li Thats like saying that a hamburger and lasagna are the same thing when they have the same ingredients (pasta is just another kind of bread, etc)... It's just absurd.
      Pizza is defined by form, not ingredients, which is why a Hawaiian pizza is more of a pizza than the deep dish monstrosity.

And it hasn't changed so far as to become something completely different. It's still crust, cheese, sauce. Just in different amounts

    It is a pizza, but if someone says "hey, let's go get pizza" or "I got you a pizza" I wouldn't think of deep dish. Someone would specifically have to qualify it with "deep dish". Kind of like saying "turkey burger with cheese" instead of calling it a "cheeseburger"

      @@menacetosociety9076 Pizza is sauce and cheese on a crust. Deep dish pizza is just as much pizza as hand tossed or thin or any other kind of crust. The ingredients are exactly the same, it's just a matter of how you shape it. And really not even a significant difference. A hamburger has two components.. ground beef and bun. If it's missing one of those two ingredients, and INARGUABLY the more defining one (the beef), it's not a hamburger anymore. And if those guy argues that he said cheeseburger, cheeseburger irrefutably refers to a hamburger with cheese.
      If you gave the average consumer a turkey "burger" or a veggie "burger" or whatever instead of a real hamburger when they asked for a real hamburger, there would be a problem. If the same consumer walked into a pizzeria and ordered a pepperoni pizza and got a Chicago Deep Dish, they wouldn't complain that they didn't get a pepperoni pizza. Also, a lot of restaurants will have many kinds of burger "alternatives". Most authentic pizzerias specialize in a particular crust type, whether it's classic New York style or Chicago Deep Dish or whatever. So you know when you walk in what to expect. It's a style difference, not a completely different food.

      @@DeltathRiylaan Disagree. It is not only about ingredients. The term Pizza is very precisely defined by now and it is the Neaples style. It is even a UNESCO world heritage. In my opinion your example is pretty bad, especially because the Burger is not even an American creation, but in fact a German. A good example of comparison would be Champagne.

    Vast majority of us that actually live in Chicago don’t eat deep dish. Unless you have out of town friends who want the novelty. Tavern style cut in squares is the unique Chicago style. Super thin and crispy.

      @@fnjesusfreak well, deep dish literally looks like a pie and it's baked in a tin instead of a flat sheet, which pies are also baked in tins.
      When I see Italian pizzas, I wouldn't think of it as pie, but deep dish has some resemblance to pies :)

    Emmett mentions knife and fork in Italy. Yup, for personal pies served at sit down restos. However *_pizza al taglio_* (pizza by the slice) is eaten by hand. They're on display; you order by weight; it's heated; go. Great looking deep dish but Scott needs to find Chicago "stuffed" pizza. Pretty sure we can guess how Mark would react. This series is awesome...glad it's back. 👍

      I don’t really get your point. I’ve never seen Chicago deep dish sold by the slice. It’s mostly a dine in dish meant to be shared with others at the table. It seems to be just what you described

      @Jacob Van Ness Yup, you missed the point indeed. It's not the fact that deep dish isn't usually sold by the slice; it's that lots of pizza in Italy is eaten *_without_* knife and fork. And I specifically said _personal_ pies denoting a smallish pizza instead of a large pizza for the entire table...so this is not similar to Chicago deep dish as you concluded. Just to be clear, at a sit-down resto in Italy, you may see three diners with three pizzas in front of them all un-sliced. Everyone is using knives and forks happily eating their own pie.

    Just to be clear there is a difference between Chicago style deep dish and Chicago style deep dish with sauce on top ordered from a proper Chicago Pizzeria. I don't know if it's the atmospheric conditions the water from Lake Michigan or the ovens but there seems to be a difference in taste texture and sometimes even appearance. Cheers

    The crusts should be a little more burnt to get that extra flavour but that’s just me...had Chicago pizza in Chicago and I remember that distinct detail about their pizza....amazing tho

    I'm going to have to make a point here: 90% of the time, when Chicagoans order pizza, it's thin crust, cut into squares. However, we do have excellent deep dish AND stuffed pizza.     Love Chicago deep dish pizza and I love NY pizza. I've never understood the sentiment that "NYC pizza you eat on the go. Chicago-style you have to sit down to eat." I eat deep dish on the go. If you can't, start lifting weights. You'll get there someday.

    Most chicagoans don’t eat deep dish. We do some times, but it’s become more of a tourist thing. We most eat what’s considered Chicago style thin crust, or tavern style pizza. It’s thin enough to get a little crackery at the bottom, but thick enough to have a chewiness on the top part of the crust, which we then cut in squares instead of slices.

    I love deep-dish and I love NY style. But here in Chicago we only eat deep dish on special occasions or if we get a random craving for it. We eat tavern style like: Phil's, Freddie's and Lina's (RIP) in Bridgeport, Giovanni's and Sorrento's in Montclare, Palermo's on 63rd and Vito and Nick's in Ashburn. Southside pizza for life.

      As I understand it, the early 1900s style of pizza was brought over from Italy and became popularized as New York style. New York just hasn't moved on, whereas Italy is on a different forefront of pizza. Two diverging paths, New York and Italy.

    Mark has a little unrelenting, gruff, Italian-American New Yorker manner, but he's sensible and willing to listen and compromise his stance. It's very refreshing to watch, as opposed to many other TH-cam videos I've seen of staunch, unyielding - yet differing - stances from tons of other Italian-American New Yorker pizza "elites."

    Good pizza is good pizza. I'm from NY, so I'm kind of a snob. But I've found good pizza in a few states at least on the east coast and mid-west. Never on the west coast. I wish there was some places in NY that served some quality deep dish chicago style pizza or bar style thin pizza, or some detroit style even here.
