Welcome back to my kitchen! Every one in a while we have a month where there is a three week gap between paychecks, so I like to do a week where I ONLY cook from the pantry! 🌼White Chicken Enchiladas
-2 chicken breasts
-light salt and pepper on the chicken
-1 (10 oz) can of diced tomatoes with green chiles
-1 cup of Monterey jack cheese inside the tortillas (this is what I usually use )
*For todays pantry video I used the cheese I had on hand, you will see me adding 1/2 cup of Colby jack and 1/2 cup of mozzarella instead*
-1 (8 pack) of burrito size tortillas
-2 tbsp of butter
-3 tbsp of flour
-2 cups of low sodium chicken broth
-1 cup of Monterey jack cheese into the sauce (the cheese I would normally use)
*in the video you see me add 1/2 cup of Colby jack and a half cup of mozzarella*
-1 cup of sour cream
-1 (4 oz) can of green chilies
-1 tsp of cumin
-a dash of salt and pepper, adjust to taste
-Top it all off with another 1 to 2 cups of Monterey jack cheese
*In the video I used half and half of mozzarella and colby jack*
Bake chicken on 350° for 15-20 minutes until fully cooked. After the enchiladas are all built and the sauce and cheese has been added, you will bake 20 more minutes!
Eat over mexican or taco rice. Top with more sour cream, lettuce and tomatoes or any of your desired toppings
BEST IF YOU EAT ON DAY ONE, LEFTOVERS CAN GET SOGGY!
🌼Breakfast Bowls

🌷Potatoes
-7 to 8 russet potatoes, washed , peeled and cubed
-2 to 3 tbsp of avocado oil
-season with salt, pepper, onion powder, garlic powder, and paprika! If I had to guess id say I added about 1/4 tsp of salt and pepper, and 1/2 tsp of garlic and onion powder!
Bake Potatoes on 400° for 15 to 20 minutes, then mix them around and add back into the oven for an additional 15ish minutes until tender yet crispy on the edges!
🌷Sausage Gravy
-Today I used a 12oz pack of breakfast sausage patties but you can just add 1 lb of breakfast sausage.
-2 tbsp of butter
-1/3 cup of flour
-3 ish cups of milk or half and half
-1/4 tsp of garlic powder
-1/2 tsp of pepper (or to taste)
-1/2 tsp to 1 tsp of salt (or to taste)
-I also did make some scrambles eggs with 8 eggs, a little half and half to make them creamier and seasoned with salt, pepper, and garlic powder!
-Cheddar cheese
TO BUILD THE BOWL:
I will break up 1 to 2 of the biscuits into the bottom of my bowl, add some sausage gravy, eggs, potatoes, more sausage gravy and then top it with shredded cheddar cheese
🌼Pork Chop Bites
-5 pork chops, boneless and cut into bite size pieces
-1/4 tsp of slat and pepper
-1/2 tsp of onion powder
-1/2 tsp of garlic powder

-1 tsp of minced garlic
-2 to 3 tbsp of butter melted
-2 to 3 tbsp of grated parmesan cheese
We had this over some Knorr alfredo.
Cook in the air fryer on 390° for 7 minutes, flip them around, and cook 3-4 minutes until cooked through!
🌼Omelets
For the potatoes I Made them the same as I did in the Breakfast Bowls but switched the russet potatoes for red potatoes and added one additional seasoning, Dash Southwest Chipotle seasoning (about 1 to 2 tsp)
Bake Potatoes on 400° for 15 minutes, mix them around and then add back to the oven for 15 more minutes.
Filling:
-1 green bell pepper chopped
-1/4 cup of red onion chopped
-2 jalapenos, seeds removed, chopped up
-1/4 cup of frozen spinach ,thawed
-5 slices of bacon, cooked and chopped up
-4 eggs
-2 to 3 tbsp of half and half
-about a 1/4 tsp of salt, pepper, garlic powder, onion powder and Paprika.
-any cheese you like I used cheddar jack
Served with Turkey Sausage patties! Topped my omelet with salsa
Normally for omelets my husband adds diced ham and mushroom but of course we didn’t have those on the day

I was sold at your first recipe enchilladas :) will definitely be making that dish....I also made your creamy pasta dish from your last video one pot meals...we got a compliment Mel LOL from my son who said "mum you've out done yourself this is nice is there anymore"....so that compliment goes to you to Mel.
